Colour: burnt umber. Nose: very fruity, some sour notes, grapefruit, raspberry syrup, sour keys (the candy). Palate: touch of peat, very fruity and sweet, nutty, candied orange and carmelized fruit. Finish: long and complex, with the smoke reimerging late after the sweet, sour & fruit notes fade!

This independent bottling is from Douglas Laing & Co., Est. 1950. This whisky was matured 14 years in a first fill sherry butt, and was bottled at 50%; 691 bottles produced. Nose: very malty, loads of fruit, Christmas cake, fresh baking. Palate: the sherry notes dominate, rounded, smooth, more Christmas cake and a touch of nutmeg. Finish: long, slighlt spicy, sweet barley.

This particular Ben Nevis is one of 339 bottles filled from the cask at its natural strength of 45.7%. The bottle is packaged in an antique wooden box, and comes complete with a numbered certificate.

Tullibardine JB 2 Single Cask

First-fill sherry, and 57.2%, this whisky packs a punch, but drinks better without water. The nose is very complex, but a touch prickly from the high alcoholic strenght; it is sweet, & sherried, w/ tangerines. The body is medium-full, big for a Tuliibardine whisky. The palate is woody, nutty & oily, & shows unsweetened bakers chocolate, wood resin & citrus notes.

Dalwhinnie is the highest altitude distillery in Scotland, but only because Braeval is no longer in opperation; it was closed by its owners Corby/Chivas Brothers in 2002. This Braeval has been bottled by Douglas Laing & Co. Est. 1949, under their Provenance lable. It is the result of a single Sherry Butt, un-chillfitered, with no colour added and bottled at 46%.

A distillery's spirit safe is the glass and brass box through which newly made spirit flows off the stills. Traditionally the spirit safe was the means by which the taxman kept tabs on exactly how much spirit was produced by a distillery. This whisky safe comes complete with a lock to protect its precious contents! On the palate the whisky is very spicy, syruppy, white oak, candied fruit, & treacle.
