Gum Sugar
A timeless classic cocktail that has been around for over 150 years, the aptly named Old Fashioned is made with Whiskey, sugar and bitters. Our recipe uses demerara sugar which we combine with gum arabic to create our in-house gomme syrup, we add that to whiskey that we age in virgin oak casks and bitters that we infuse with cherry wood. The result is a rich and indulgent old fashioned that is better than most bars make."

A limited and refined single malt Scotch whisky, The Bruichladdich Thirty is bottled at 43% bringing the sweetness of toasted oak, honey and soft vanilla to the fore. True Wild Roper's Hold 8 Yr Straight Rye
$121.99
Roper's Hold is a Blended Whisky produced by our friends at True Wild, a new Distillery and Restaurant in Calgary. It will be 2030 before they have a whisky of their own, but in the interim they have sourced whiskies to bottle, giving an indication of where they are going as a producer.
Bottled at 47%
Producer Description
"Our “First Release” journey began with our co-founder, Bryce Parsons uncovering a collection of exceptional 8-year-old straight rye whiskies. Blended from three sources, two of these distilleries from the Pacific Northwest have since closed their doors, making this blend a rare tribute to craftsmanship and history.
But finding the barrels was just the beginning. Bryce brought them to Canada and began the meticulous process of blending these remarkable ryes, each with its own distinct character. To complete the transformation, the blend was finished in red wine barrels from the renowned Black Hills Estate Winery in the Okanagan Valley, infusing the whisky with layers of rich fruit and velvety tannins."

Angus' Notes
"This devilishly delicious double O.O. dram for one of our friends at The Sindicate Club in Canada. A combination of a 1998 vintage Refill Hogshead which has been 'top dressed' with some Orkney malt from a 1999 vintage First Fill Sherry Butt. These two components were married together in the Refill Hoggie and the resulting heady brew was bottled with a few degrees of reduction at 53% to help bring balance to the final 17 year old malt. The result is a waxy and richly-peated example of Old Orkney, with some savoury, earthy richness from the subtle sherry influence. a whisky to make you go 'O.O.LALA!"
