Another quirky little treat from Tel-Aviv's Milk & Honey distillery... This 3 year old Israeli single malt was matured in a cask used to mature a Belgian-style ale. 55.1%. Only 6 bottles have come to Canada!
Producer Note: "This single malt whisky has been fully matured in 3 ex-beer casks from the Jems Brewery. These casks, originally ex-bourbon casks granted to Jems by M&H, were in-turn used for the maturation of the Jems 8.8 – a strong Belgian ale style beer – which is characterized by fruity aromas, notes of caramel and pleasant bitterness. After 4-6 months, the beer was extracted and the casks returned to M&H, re-filled and matured to perfection for 3 years."
Natural colour, non-chill filtered, and bottled at 55.1% abv.

This Rest & Be Thankful Port Charlotte single cask is listed as a EU Exclusive on the indie bottler’s own website. I wonder how we managed to get some? Hmm… This 2009 Port Charlotte was matured in an ex-Bourbon Hogshead #1263 for 14 years. It was bottled in July 2023 at a cask strength of 57.4%.

The Ardbeg Committee celebrates its 25th Anniversary this year, with the release of Ardbeg Smokiverse. This Ardbeg Day bottling has been bottled at 48.3% from a batch of spirit produced from a high gravity mash. According to Ardbeg "This process unlocks a fruitier, more intense Ardbeg. Layers of muscovado sugar, ripe barley, and toasted sourdough bread, culminate in a burst of ripe tropical fruits and sweet peat." Limit 2 Per Customer!

Responsible for converting our malted barley into fermentable sugars (mashing), all life at Ardbeg revolves around the tun. This time, however, it has become a force to be reckoned with, as we concentrate its power to materialise a new frontier of flavour for Ardbeg.
"Experimenting with a process called ‘high gravity mashing’, our intrepid whisky creators vastly decreased the amount of water in the mash tun, then packed more grain into the mix than ever before. Crushing and compressing every drop of liquid, this unconventional mash has magnified the intensity of flavour-active acetate esters. Ramping up the density of wort to astronomical levels, we’ve drawn in fruitier, sweeter flavours from the deepest corners of the mash tun."
