The Adelaide Hills produces some of Australia's finest Chardonnay. M3 Vineyard was planted in 1995 and takes its name from owners Martin Shaw, Michael and Matthew Hill Smith. The grapes are hand picked and whole fruit pressed prior to undergoing barrel fermentation and maturation in French oak. But this is not an oaky Aussie. Sophisticated with pure fruit character, it's elegant. Wonderful with lobster.

Four generations of the Osborn Family have made wine at the d'Arenberg vineyards in the hills just north of the township of McLaren Vale. The original d'Arenberg Riesling vineyard was next to a dam, or reservoir, which in the driest summers would completely dry up. Winemaker d'Arry Osbourn soon learned that a dry summer meant a very concentrated Riesling with lots of flavours and intensity.

It is made in exactly the same way as conventional Port, but with white grapes rather than red. As the name suggests, it has a drier, fruity taste, and is best served chilled.
