"As we didn’t purchase this barrel direct from the distillery, we’re not using their name on the label. But there’s only one well known distillery in Saanich on Vancouver Island that’s known for making whisky. To further make things interesting, this cask is supposedly peated, yet we haven’t been able to detect any ourselves. Maybe you will?"

"Table Beer with Grape Pomace
We know what you’re thinking: What the heck is grape pomace? Easy! It’s the leftover skins, seeds, and stems from the winemaking (or in this case, grape beer making) process. Traditionally, piquette is made by adding water directly to the pomace, pulling the remaining delicate flavors, aromas, and color. So of course, we had to try this method with our most versatile table beer: Chaise! It’s insanely crushable with berries, citrus, and melon in every sip . Time’s up, sparkling wine — at 2.9% Abv , you can’t go wrong."

We love pushing the boundaries at Irrational. For the newest release in our Ethereal series, we wanted to try something new and exciting: very low and very slow fermentation. The fun comes on the process side, where we fermented this beer at an extremely low temperature well outside the normal specs of the yeast and lagered for an additional four weeks on top of our standard process. This one might be our cleanest, clearest, and crispest lager to date."
