This 16 year old Ileach from the distillery meaning 'sound of Islay' is 57% after maturing in a refill ex-Bourbon hogshead.

Panel's Tasting Note: "Industrial bath salts, carbolic, lanolin and sheep dip, then bog myrtle, thyme, heather flowers, chopped apples and celery. Unlit fireworks in their box and cigar ash. Sweet, clean and lightly cooling to taste (menthol cigarettes), with ash in the finish. Water simplifies the aroma and makes it more grubby/industrial – ‘well used electrical equipment’, minerals, batteries, soot. An oily texture and a sweet taste: smoky, with coal dust in the aftertaste and finish. We imagine the operators contemplating the Paps of Jura through the massive windows of their still house."

Drinking Tip: "Watching the workers, cigar in hand."

SCOTTISH HEIDI

10 Year Old from an ExBourbon barrel, distilled in the Eastern Highlands and bottled at 58%. This distillery is believed to be named after a peninsula between Cardross and Helensburgh.

Panel's Tasting Note: "Aromas of a rock garden with a variety of herbs like sage, fennel and turmeric as well as a floral note of Edelweiss, whilst in the background fresh tar being laid on a road. On the palate smoky Swiss cheese with digestive biscuits then becoming sweeter, brownies and dark mint chocolates with a trace of teasing lavender smoke. Adding water, dry and dusty then turning fresh like a Ricola Lemon mint followed by a nougat note of dark Toblerone. The taste with water is of pork sausages, water biscuits with peppered cream cheese and a dry volcanic ashy note to finish. This distillery is believed to be named after a peninsula between Cardross and Helensburgh."

Drinking Tip: "After skiing with a cheese fondue."

This 28 year old Speysider has been matured in a first fill sherry hogshead and have been bottled at 55.4%. 

Panel's Tasting Note: "Savoury, spicy aromas of beef goulash, Night nurse, cranberry concentrate, maple-cured bacon, nutmeg, root beer, red grapes, Stollen, lamb gravy, caraway and rye bread made us all hungry. The palate, not as savoury as expected was thick with cedarwood, spiced apple tobacco and mulled cider. With water we now smelled celery, mushrooms, plum chutney, sesame, roast turkey & redcurrant jelly although a sweetness of wild strawberries. To taste it was now minty, dry and chewy with a spiced milky coffee and musty note. We all agreed it was better neat. From the first purpose built distillery in the twentieth century."

Drinking Tip: "In place of mulled wine."

Panel's Tasting Note: "The panel were first exposed on the nose to burnt fruit such as orange, junipers and citrus notes. On the tongue it then opened up into a savoury feast of chargrilled steak and smoked pheasant with red berry compote on the side. With water the meal seemed to be added to with a dollop of horseradish, sprinkled with coal dust and salty seasoning, with subtle herby elements of rosemary, fennel and a lemon béarnaise. For dessert there was warm salty caramel sauce poured on top of real vanilla ice cream. It was a beautiful feast."

Palate: Sweet, rounded and creamy. Oranges, plums, cherry and walnuts, chocolate, honey-mead, sherry and soft, spiced oak. Finish: Medium with warming mulled-wine spices, sherry and caramel."

My Tasting Note: Nose: sawdust from a High School woodshop and honeycomb emerge first from the subtle nose; as it warms it becomes very cereal reminding me of Kellogg's Vector and perhaps Quaker Harvest Crunch; dried apples show later; Palate: dry and oaky the palate shows some dried fruits, especially apple, and some soft sweet spice for good measure; greener than I'd expect for a whisky of this age it is youthful with a touch of barley, but pleasantly so; Finish: clean, soft and smooth with more toasted oak and dried apple.
