A 15 year old from the Spey Valley bottled at 57.1% from a First Fill Sherry Butt.

Panel's Tasting Note: "Lemon and sweet cucumber on the nose, reminded the Tour-guide of Hendrick's gin cocktails, while someone else identified mud and leather, suggestive of a rugby club changing room; sweet notes of Demerara, barley sugar and honey developed all the while. Leather and wood impressions on the palate mingled with mint and violets, light toffee, syrup and coffee creams. In reduction, the nose had chocolate and crème caramel, baked apple with brown sugar and raisins plus an intimation of matchboxes. The palate, with orange, fig, tobacco and beeswax was surprisingly light and joyous. From the earliest Dufftown distillery to be licensed."

Drinking Tip: "While watching rugby, or whenever tempted to drink gin."

UNUSUAL AND HIGHLY ENJOYABLE

This Southern Highlander was matured 10 years in a Refill Port Pipe, and has been bottled at 59.6%.

Panel's Tasting Note: "We encountered a totally magnificent nose – plentiful plum jam, candy floss, toffee crisp, fudge, jammy dodgers and port wine, but with deeper layers of tobacco, liquorice and Eastern spices. The palate had slightly burnt damson jam, fruity toffee, fruit chutney and fig rolls – teasingly tannic, mildly minerally and vaguely sulphury, but acceptably so. The reduced nose uncovered ripe watermelon, fruit pastilles, wine gums, icing sugar, sweet sultanas and blackcurrant yoghurt. Adding water transformed the palate into a complete joy – strawberry toffees, Astro Belts, fruity tobacco – unusual and highly enjoyable. The distillery is very near the West Highland Way (south end)."

Drinking Tip: "A dram for chatting up strawberry blondes."

INVIGORATING, EYE-WATERIN, BREATH-CATCHING

An 8 year old Ileach, matured in a Refill Barrel and bottled at 64.2%. 

Panel's Tasting Note: "Classic Islay nose - onshore winds drove across the moor, picking up lanolin, dunnage warehouses, swimming pools, hessian ropes, peat smoke, ash and embers on the way. Then we opened the kitchen and found battered haddock, roast lamb and marmalade on duck. The unreduced palate was invigorating, eye-watering, breath-catching - a tsunami of lime, lavender, ash, well-barbecued meats and charred fish skin. The reduced nose altered - Olbas oil, euthymol toothpaste, tobacco leaf, amaretto, clove and a dog shaking itself after swimming in the sea. The palate turned to sweet salty prawns, wood-sap and restrained smoke. Heavily peated whisky from the 1881 Rhinns distillery."

Drinking Tip: "If you are having one whisky - make it this - it will go a long way!"

This 13 year old is from a Refill Ex-Sherry Gorda, bottled at 55.7% and incredibly dark.

Panel's Tasting Note: "The nose produced fascinating and weighty aromas - cola cubes, toffee, dark chocolate, treacle, nutmeg, walnut, plums, vintage port and Christmas cake with dark cherries, soaked in rum and Madeira. The palate was mouth-drying but 'Stunning!' "according to one panellist" - dark chocolate with cherries, dark toffee apples, tarte tatin, black tea, rum, charcoal and molasses; even an old gym shoe. The reduced nose had tobacco, pecan pie, treacle tart, toasted coconut and brown sauce. Water lifted the palate - leather, oranges, toffee and maple candy - an interesting combination of vinegar astringency and toffee apple juiciness. A rare appearance from this Brechin distillery."

Drinking Tip: "To accompany beef or game - or as a digestif."
