One of the finest, young, Auchentoshan expressions we've ever had, highlighting the distillery's lightly floral and citric style. This is a decadent but well balanced whisky that's very drinkable at its higher proof. From the distillery: "For years, evangelists asked us to create a non chill-filtered, cask strength edition of our acclaimed Auchentoshan Classic. Valinch was born. The Valinch being the name of the pipette used to draw whisky straight from the cask. An appropriate name for a whisky with all the depth of taste, flavour and texture associated with sampling whisky at source. An unadulterated small batch release." Distiller's tasting note: The Nose: Crème brûlée. To The Tongue: Sweet and creamy, then invigorating full bodied orange zest. To The End: Sweet, crisp and lingering."

The Glenfarclas 105 was featured on Day 7 of our 2021 KWM Whisky Calendar.
The Glenfarclas 105 was introduced more than 50 years ago, back in 1968. It was the first small batch, cask strength Single Malt Whisky released by a distillery. Like everything that Glenfarclas Distillery releases, the whisky within the 105 was matured entirely in ex-sherry casks. No age statement is given on the bottles, but my guess is we are looking at a whisky that is between 7-10 years old. And of course, it is bottled at a bracing 60% ABV or 105 British proof - hence the name. Pour a bit into your glass and it a taste!

Bottled at 40% the Balvenie Double Wood is matured in ex-Bourbon casks before finising in Oloroso sherry casks for 9 months. The whisky is then married in tuns for 3-4 months before bottling.

"DoubleWood 12 was launched in 1993, using a process designed by our Malt Master David Stewart in 1982, now commonly known as 'wood finishing'. To make The Balvenie DoubleWood, David Stewart MBE takes whisky that has spent at least 12 years in traditional whisky casks, American Oak ex-bourbon barrels and hogsheads, and moves it to Spanish oak ex-Oloroso sherry casks for an additional nine months. The whisky is then transferred to large oak vessels called “tuns” for 3-4 months to allow the whiskies from individual casks to “marry”.'

Here it is: the classic 25 Year Old Glenfarclas Single Malt Scotch. No corners are cut at Glenfarclas. Even though it is much more expensive, and hard to procure, their focus is still on European oak. Founded in 1836, Glenfarclas is the second oldest family-owned distillery in Scotland.
