A small handful of casks were selected from Cotswolds founder Daniel Szor's personal favorites. 'Uniquely active casks' were intentially targeted, to ensure a rich and expressive single malt. These were STR (shaved, toasted, recharred) American red wine casks which, as we can all agree, is the only way to use wine casks for maturing whisky.

Andrew's Tasting Note
Nose: decadent, toasty and very spicy; loads of dark sweet caramel, shredded coconut, cherries and orange rinds from an Old Fashioned cocktail; peppery and earthy with subtle chocolate and leather.
Palate: big, rich, decadent and very spicy; cinnamon hearts, cloves pulled from honey baked ham and licorice root; more dark caramel, demerara sugar and espresso dregs; the candied orange and cherry notes are shyer on the palate, overlaid with notes that become more chocolaty and peppery with earthy leather and sweet tobacco.
Finish: long, spicy and decadent with Dutch licorice, coffee dregs and demerara.
Comment: For a young malt at more than 60%, the whisky isn't sharp; it is bold, rich and unapologetic though; feeling a chill on a damp summer night? this will warm you up!
Producer Tasting Note
Nose: Dry hay and cut wood, with dark chocolate and dried figs, and plums in sweet syrup.
Palate: Warming cereal and toast notes, with lots of fresh red fruits and butterscotch.
Finish: Hints of spicy oak, lots of dried fruit and a lingering nutty, dry note.

According to the Cotswolds team, this one is "American and Spanish oak hogsheads and butts, seasoned with Oloroso and Pedro Ximénez sherry." They also qualify that by saying it's entirely sherry cask matured (don't let the American oak throw you off) full the entire term. It's rather brilliant seeing England back in the single malt game, no? The English whisky renaissance is going to be fun to watch.

This English single malt has been matured exclusively in ex-Bourbon before bottling at 59.1%. Non-chill filtered. Natural colouring.

The first release from Cotswold Distillery's Harvest Series, Golden Wold was limited to 5000 bottles. The whisky was matured in a combination of STR Red Wine casks, ex-Bourbon casks, and ex-peated whisky casks. Bottled at 52.5%.
