Peatheads, rejoice! For those searching for a fix of sharp, young peat and bucketloads of billowy smoke, look no further. Port Askaig is a wee ferry port off the east coast of the isle of Islay. Its proximity to two of the island's most unfairly overlooked distilleries should give some sort of clue as to the pedigree of this neat little treat of a dram. Your choices are either Caol Ila or Bunnahabhain, and let's just say the answer rhymes with Caol Ila (Do you know how hard it is to rhyme in Gaelic?!).
If you know the distillery's character you'll immediately be able to see it all over this one. A true value whisky too. 45.8% abv, uncolored and non-chill-filtered.

Maturation in refill Sherry seasoned casks prevents oak from dominating the flavours of the whisky as it would if first-fill casks were used. This allows our robust and oily new make spirit to gently mature over an extended period of time, delivering a full-on aromatic peat flavour with a surprisingly sweet finish.

Just as our stillmen refuse to abandon the traditional crafts of distillation in favour of automation or industrialisation, so farmer William Rose rejects the use of herbicides, pesticides and artificial fertilisers. Crop rotation is key. Our barley must take its turn in a seven year farm cycle that also produces organic cattle, sheep, oats, beans, grass, carrots, market gardening and a megawatt of green electricity. My tasting note from Highland Park Distillery on Monday September 8th 2008. 48.3%
Nose: strawberries and whipped cream, fresh peach, crème brule and white chocolate.
Palate: dark fruits in fresh whipped cream with dark chocolate, honey and smoke show up later.
Finish: buttery and mouthwatering with honey, fresh fruit and rich cream.
Comment: As my friend, Jane would say, "it tastes like more!" Although Highland Park has not positioned this whisky to be a collectible, it is beautifully packaged and a real treasure.
