The Highland Park 30 Year has been increasingly rare and hard to find the last few years. Matured in Refill Sherry the whisky is a delicately balanced older malt in contrast to the bolder 25 year. Bottled at 45.7%.

Distiller's Description
Maturation in refill Sherry seasoned casks prevents oak from dominating the flavours of the whisky as it would if first-fill casks were used. This allows our robust and oily new make spirit to gently mature over an extended period of time, delivering a full-on aromatic peat flavour with a surprisingly sweet finish.

Producer Description
First released in April 2008, HIGHLAND PARK 40 Year Old is batched in very small quantities with only 10 casks selected for each bottling – it’s the culmination of years of whisky-making knowledge and experience.
Described in Whisky Magazine as ‘an incredibly well drinking Highland Park… sharing some of the 18 Year Old’s refinement but taking it into a different league’, our 40 Year Old is both highly complex and beautifully balanced, a rich and luxurious single malt at once deep, aromatic and smoky, yet singing with the sweetest notes of soft toffee, dark chocolate and fragrant orange zest.
Andrew's Tasting Note (From 2008)
My tasting note from Highland Park Distillery on Monday September 8th 2008. 48.3%
Nose: strawberries and whipped cream, fresh peach, crème brule and white chocolate.
Palate: dark fruits in fresh whipped cream with dark chocolate, honey and smoke show up later.
Finish: buttery and mouthwatering with honey, fresh fruit and rich cream.
Comment: As my friend, Jane would say, "it tastes like more!" Although Highland Park has not positioned this whisky to be a collectible, it is beautifully packaged and a real treasure.
