This one says its first maturation was for 6 years in (probably in ex-Bourbon) before a 12-month finish in a Ratafia Champenois Barrel. So...a seven-year-old then, rather than 6? Who knows? Maybe they were short a day or two somewhere in there. Either way, we love Bushmills. Especially when it comes from the indie bottlers.

Lytton Springs, in Sonoma County, became part of the Ridge estate in 1991. A quarter century’s experience with this vineyard had convinced us that it was an exceptional piece of ground. The oldest Petite Sirah vines on our Lytton Estate were planted in 1901 and the youngest in 2008. We made our first wine from the property in 1972. In 2002, we began bottling portions of the Petite Sirah as a separate wine for a limited release, up until then it had always been included in the Lytton Springs Zinfandel. In 2003 we made another limited release and in 2009 our first national release.

Soju production begins with the fermentation of grain starch by yeasts and enzymes. Once the fermentation is complete, the liquid is distilled to produce clear alcohol. Finally, soju is bottled and typically has around 20% alcohol by volume. Good Day is the flagship Soju of Muhak, a Korean distillery established in 1929. Good Day Soju is filtered 10 times and actively infused with oxygen for 72 hours. This unique manufacturing process creates a very smooth and clean-tasting spirit. The fruit sojus are lower in alcohol at about 12%.

At the foot of the majestic Schlossberg hill, surrounded by vines and roses, lies Domaine Weinbach. Named after the little stream that runs through the property, it has been planted with vines since the 18th century, with the winery itself having been established in 1612 by Capuchin friars. These vineyards, to this day surrounded by ancient walls, are specifically named Clos des Capucins. In addition to this, the estate’s history is well documented through the image of a monk which fittingly adorns their labels. After being sold as national property during the French Revolution, it was acquired by the Faller brothers in 1898 who then left it to their son and nephew, Théo. Théo Faller was a prominent figure in Alsace winegrowing and an ardent defender of quality wine production. He developed, expanded and enhanced Domaine Weinbach. In 1979, Colette -Théo’s wife-, Catherine, Laurence Faller and their team pursued the family’s passion for the great wines of Alsace and its unrelenting commitment to delivering excellence. In 1998, Domaine Weinbach began working in accordance with the principles of biodynamics on a total of 8 hectares. Since 2005, all the vineyards (28 hectares) have been worked according to biodynamic. Since 2016, Catherine has led the estate winery with her sons, Eddy and Théo.

The MacNair's Story: "Ne'er happier than when exploring the globe or the spirit from the golden still, Harvey McNair was - in the parlance of his native Glasgow - a man or 'lad o'pairts': a true Victorian entrepreneur. A trader, thereby a traveller, an inventor of all sorts of mechanical contraptions, his genius lay in the blending of fine whiskies. He loved and championed the natural, unadulterated colour of whisky. "Pure gold' he said with a wink. Bon viveur and raconteur, he cut a dash about town and had a bursting social calendar. His best stories were always 'agin hisself', like how his neighbours thought him an alchemist or, indeed, how he discovered Lum Reek. But he knew a good dram when he blended it, or indeed stumbled across it. Just like our own 21st Century Whisky legend Billy Walker, who has recreated and refined the Lum Reek blend for the modern palate.
"One autumn evening in the 1860s, after a day's fishing, our man was quaffing a dram in the old stone bothy near GlenAllachie. Due to a blocked chimney (or lum) the room filled with smoke. It had "a marvellous effect on the whisky in my glass," confided McNair later to his merchant cronies. "Indeed, perfection!" Ne'er a truer word was spoken. Today's Lum Reek is the creation of our Master Blender Billy Walker, raising his hat to the top hatted Victorian. It's a heavily peated malt, marrying Islay & Speyside whiskies with rich GlenAllachie, to extend the flavour profile. Lum Reek is matured in GlenAllachie's warehouses, then bottled at 46% (and above), unchilfiltered, allowing its natural colour to shine like those golden autumns Harvey MacNair enjoyed, decked out in his waders."
