Luminosa was inspired by its Latin namesake meaning “full of brightness.” An intriguing and unique quality of this hop is that it is almost completely void of the pine/resinous character that typically accompanies most high-oil varieties making it a great candidate for hazy IPA.  Peach-mango lemonade, candied orange peel, boysenberry, papaya and guava can all be expected."

Under communism, Czechs in every high school and university were sorted into "hop brigades" each summer, where they helped farmers tend and pick their immaculate crops of Saaz in Žatec. For this year's rotating batch of Hoppy Czech Lager, our brewmaster selected a newer hop variety in Premiant to showcase notes of lemon pith, lavender, and a hint of spice. Cheers!"

With our long experience in the subtle art of blending fruit and liquor, we did not limit ourselves to the classic crême de cassis, instead we have elaborated blackberry, blueberry and even chestnut spirits whose flavors bring to mind our mountains. Crème de violette and liqueur de violette are generic terms for a liqueur with natural and/or artificial violet flower flavoring and coloring with either a brandy base, a neutral spirit base, or a combination of the two. The taste profile and aroma are distinctly floral and sweet, and reminiscent of the violet candies popular in the early to mid 20th century. Its known production dates back to the early 19th century when it was served with dry vermouth or alone as a cordial.

3 Fonteinen Schaarbeekse Kriek is the result of macerating local hand-picked Schaarbeekse cherries on traditional lambik. No addition of juices, syrups or artificial sweeteners. Unfiltered. Unpasteurised.

For this Schaarbeekse Kriek, we macerated freshly picked local Schaarbeekse sour cherries for a tad less than twelve months onto two-year old lambik. The maceration happened on a small foeder. Some more jonge lambik was used to blend this fine fruit lambik. The weighted average age of this Schaarbeekse upon bottling is more than twenty months. The final fruit proportion is 372 grams of Schaarbeekse sour cherries per litre of finished Schaarbeekse Kriek, More than 80% of the grains used while brewing, were sourced in our own Cereal Collective.
