Peas in a Pod is our very first time fermenting blackcurrants. They're a funny, delightful fruit, straddling the line between grapes, cherries and vanilla. Folks (including us) have used currants to describe Cab Franc wines—so of course we thought 'let's blend these things together'.

We know what you’re thinking: What the heck is grape pomace? Easy! It’s the leftover skins, seeds, and stems from the winemaking (or in this case, grape beer making) process. Traditionally, piquette is made by adding water directly to the pomace, pulling the remaining delicate flavors, aromas, and color. So of course, we had to try this method with our most versatile table beer: Chaise! It’s insanely crushable with berries, citrus, and melon in every sip . The limited Bottled in Bond Bourbon release from Louisville, Kentucky's Angel's Envy Distillery. Matured for between five and six years in charred new oak casks. Bottled at 50% abv.
Since it is Bottled in Bond, it adheres to these rules, which were put in place by the Bottled In Bond Act in 1897:
- All whiskey in the bottle must be produced by one distillery and by one distiller over the course of one distillation season.
- The whiskey must be at least four years old.
- It must be bottled at least 100 proof / 50% ABV
- The whiskey must be aged in bonded warehouses under United States federal supervision.
- The label on the bottle has to state which distillery it comes from and also where it was bottled.
