If you're a fan of dry Riesling, this is the wine for you! It's a serious mineral dry white wine with a punch! Brilliant white-yellow colour with straw-yellow hues. Ripe stone fruit, lychee, flint, orange peel and a touch of mint in the nose. Super juicy start with fresh ripe acids and minerals upfront; elegant texture with a lot of content but at the same time refined; long, fruity aftertaste with citrus and ripe white fruit. Copper Stilled in Small Batches: Every drop of alcohol that goes into a bottle of Sipsmith has been distilled in copper. Copper draws out the impurities and cleanses the spirit. It’s what makes Sipsmith spirits so incredibly smooth.
One Shot Method: One of the only gins in the world to use the “One-Shot Method”, meaning we use exactly the right amount of botanicals in our distillation so that we only need to add water to bring it down to bottling strength. 99% of gins are made using a concentrate which is diluted with neutral grain spirit and water. This neutral alcohol has had no contact with copper nor the botanicals so it produces a harsher, less balanced gin.
Hand Cut: We only ever retain a tight heart cut (the highest quality) of the liquid which is cut by hand. Much like a fine single malt, it’s what delivers our uncompromising quality of spirit.

"The Volstead Act of 1920 which initiated Prohibition in the USA granted permits to six distillers in Kentucky to continue to bottle bourbon for medicinal purposes. Through one of these permits, Old Forester continued to be produced as medicinal whiskey on Louisville’s famed Whiskey Row. It is the only bourbon continuously sold by the same company that has been available for sale before, during and after Prohibition.
During this time, all whiskies had to be bottled at 100 Proof. With a barrel entry proof of 100, the “angel’s share” would have created a 115 proof whiskey after maturation. To pay homage to this era, Old Forester presents 1920 Prohibition Style Bourbon at 115 proof to represent the rich flavor profile this bourbon had nearly 100 years ago."

We have a new release from Scotland's smallest distillery... I can't back up that statement about them being Scotland's smallest distillery, but it was on their website. Given there is only one man making the whisky, and he only distills when he's not farming... it is probably true. What is undeniable is that the whiskies are lovely, legitimately rare, and in my opinion, it might be one of the best batches we've seen on this side of the Atlantic!

"The barley variety Publican was grown in the 43ac field and harvested by John and Sandy on the 28th & 29th August 2009. It was then dried and stored on the farm to be malted in Alloa during the summer of 2010. The twenty-seven first-fill barrels, which had previously been used to mature bourbon from Clermont Springs distillery in Kentucky, were matured on the upper level of our dunnage warehouse. They were filled in June, July and August 2011 and bottled in September 2023."
