Sponge Grand Champagne Cognac 1972
$599.99
Producer Note
"Cognac Sponge Edition No.6 is a Heritage.72 Grande Champagne cognac, one of 180 bottles from a single cask at natural cask strength of 50.2%. If our 1972 Armagnac could be equated to an old Glen Grant, this rather more subtle, fine-boned and complex old Grande Champagne Cognac of similar pedigree could be said to resemble a venerable aged Linkwood or Strathisla. Anyway, all you whisky hoarding grainiacs should stop messing about with whisky (except our bottlings, naturally) and give these Cognacs a spin! Dried fruits, earths, tobacco and rancio with a slender drizzle of honey over the top - there are abundant pleasures to be had with these old spirits."

Producer Description
"Cognac Sponge Edition No.7 has been specially created by the Sponge himself from five different parcels of Petite Champagne cognac. Spanning five different vintages and bottled at natural cask strength, this is technically a 'Tres Vieux' cognac. The recipe is 8% Heritage N.69, 36% each of Heritages N.71 and N.73, then 10% each of Heritages N.75 and N.88. You have no idea the number of emails it took to make this bottling a reality - please purchase them with greedy lust and the deep weighty breaths of tortured consumerist desire."
Mezonte Raicilla Joya Hildegardo
$184.99
Raicilla is is a distilled Agave spirit similar to Tequila and Mezcal. This bottling from Mezonte is a Raicilla made using the Amarillo Agave plant. It was produced by Hildegardo "Japo" Joya in Cabo Corrientes, Jalisco. Japo was at least 87 years old when this Raicilla was distilled in 2020. 46.5%.
Mezonte is a non-profit organization built to support traditional agave spirit production in Mexico. The organization works to ensure that the people that produce the spirit get a more substantial share of what is made from each bottle. Menzonte's goal is to work with the producers, helping them invest in the agriculture and technology needed to make future production sustainable.
From The Menzonte Website
"Hildegardo Joya, better known as “Japo” is one of the oldest producers in the west of Jalisco. He is possibly one of the last producers of his generation that continues to work and make the most traditional raicilla in all of Cabo Corrientes.
Japo grows only 3 types of maguey in his mezcalera: Cenizo, Verde, and the most commonly used: Amarillo. These can take from 8 to 35 years to mature.
At 87 years old, he continues to go to the countryside with his machete and clean his land. An eternally jovial man who knows how to have fun without leaving aside the commitment to plant agaves each year even if he knows that he is not going to harvest them. "

Many years ago, according to legend...
A flash lighted up the sky of the southern sierra of Oaxaca. A roar was heard and "eyes of fire" were seen falling everywhere. one of them made a small crater. which a mezcalillero master decided to use to cook his espadín pines and then produced the best me mezcal that the region had ever tasted. “How did you do it?" they asked him
. And the old man only responded:
"It Fell From The Sky”.

La Gritona

DISTILLED AND BOTLLED IN VALLE DE GUADALUPE, JALISCO, MEXICO
La Gritona Reposado Tequila is a subtle rested tequila distilled by Melly Barajas and her staff of women at her small distillery in Valle De Guadalupe, Jalisco (NOM 1533). Melly distills La Gritona only with agave that has matured, always with an age of between 8-10 years, and all of her piñas must originate in the iron-rich red soil of the local Jalisco highlands. These agave plants are cultivated at the height of their sugar production, near the end of the life cycle. They are put into ovens within 24 hours of trimming. La Gritona IS and ALWAYS has been additive-free.
Melly’s agave is first steam cooked in two thick-walled earthen ovens for 24 hours and then allowed to rest for another 24 hours before crushing. The collected liquid is naturally fermented and oxygenated in open steel vats at a rate that is dictated by the local air temperature, usually 8-12 days. Once fermentation is completed, we distill our nascent blanco tequila twice. We rest the distilled blanco in reused American whiskey barrels (Jack Daniels and Balcones) for 6 months before bottling.
Our reposado is very pale in it’s color for a tequila with a 6 month barrel rest. We use the same barrels over and over again to allow for them to become stripped of most of the residual oak, whiskey, and color. We like for barrel notes to be as stunted as possible in our tequila. Our aging is intended only to soften and round out the blanco tequila from which La Gritona is derived, not to introduce new notes. Our intention is to keep the verdant and crisp qualities of the original plant intact while still allowing it to age briefly in the oak. We do not use copper stills or a tahona, and we do not diffuse or use an autoclave. Our cooked agave is crushed with a steel mill and we distill our liquid in steel stills with copper coils. Every step of production takes place under one roof and our facility is overseen by a small staff of local women that work each process from start to finish.
All of the agave remnants that are left over after production are given to local farmers to use as cattle feed. Our bottles are hand blown with recycled Mexican glass in Zapopan, an hour away from the distillery.
