La Venenosa Sierra Volcanes Raicilla

This Raicillo is the work of Arturo Campos and is made using the Agave strain maguey Cenizo. After harvesting the Agave, it is roasted in a traditional pit oven using black oak. It is then twice-distilled in small clay pot stills.
The La Venenosa range of Mexican Spirits was originally selected by Chef Esteban Morales, with the goal of finding the best spirits producers and bringing their little-known productions to a broader market.

Escala Humana is the personal project of husband and wife team Ayelén and German Massera. The winemaker for Matias Michelini since 2016, German has been making wine since 2003. His resume includes stints at some of the finest wineries on the planet. With Escala Humana, Ayelén and German have chosen to focus on parcels of old vines planted to unconventional varieties like Bequignol. All of their wines are made as naturally as possible with minimal intervention.
"At just over 1400m above sea level, this vineyard is in San José, a sub-region of the Uco Valley’s Tupungato. The 70+-year-old vines are planted on clay loam and are trained in pergolas. The grapes are destemmed and fermented on skins for four weeks before being pressed off. After an eight-month élevage in concrete egg the wine is bottled unfiltered. Their home vineyard on Te Muna Road is situated just minutes east of Martinborough village, with 24 hectares of distinctive alluvial gravel, and terraced land stretches out along the banks of the Huangarua River. The soils of the vineyard are alluvial loams that were formed by the Huangarua River over 20,000 years ago. With very deep alluvial gravels now layered over the loams, this composition ensures exceptional drainage, one of the key prerequisites for nurturing and producing premium quality, healthy grape vines.

The origins of the Felluga family - who own both Marco Felluga and Russiz Superior - dates back 150 years, and six generations later they enjoy a position as one of the benchmark producers of white wine in Italy. The winery follows sustainable viticulture practices and derives all of their electricity from solar panels. Collio is situated in northeast Italy on the border with Slovenia. The Pinot Bianco has a deep straw yellow colour with golden and green hues and expresses ripe apple and flower aromatics. In the mouth, it's silky and round with a lengthy finish.
