We utilized these beautiful casks to finish a few barrels of Wild Life single malt whisky. The resulting spirit is a wonderful expression of sherry-finished whisky: chewy dried figs, chocolate covered raisins, rounded malty notes, fruit leather and soft French oak on the finish.”
