After all the stylistic and methodical experiments, I focused on the essentials while dotting my F & K with a bigger mission than before: since 2020, they embodied my vision of traditional, balanced and layered wine from my village. Don’t get me wrong, I still love all the past vintages of Forks, they all hold an important place in the evolution of this wine. But the Forks I want to make now should be more of a “village” wine in the best sense of the word, reflecting our precious Bilovice loess in the case of this white. (The red one showcases the richer clay soils of Moravský Žižkov.) These wines are a great introduction to our area and great value for money, given the vineyards we use here – all are at least 25 years old and include some of our top-notch sites otherwise used for our top-shelf White Labels.

Located in the wine-growing village of Bué, a few kilometers from Sancerre, the Bailly-Reverdy estate is a family estate created in the 1950s. Today, Franck and Aurélien farm 28 hectares spread across the Sancerre and Pouilly-Fumé appellation. The estate is located in the village of Bué, 5 km from Sancerre, renowned for its many winegrowers (around 30 families) and the diversity of its terroirs. The vineyards of the Bischöfliches Priesterseminar (Episcopal Seminary) comprise 34 hectares of land, including sites such as Erdener Treppchen and Trittenheimer Apotheke on the Mosel, Kaseler Nies’chen on the Ruwer, and Ayler Kupp on the Saar. In 1773, Archbishop-Elector Clemens Wenceslaus of Saxony founded the Bischöfliche Priesterseminar under the name “Seminarium Clementinum.” To date, it is still the training center of the Roman Catholic Diocese of Trier for the priesthood.

Édouard Lepesme is among a small group of winemakers working to change the public’s perception of the Côtes D’Auxerre (neighbor to the much more famous Chablis region) as a source of only high-yield, inexpensive wines: his entry level Chardonnay — which is decadent yet lean, and incredibly affordable for this price point — speaks for itself. Hand-harvested; fermentation in used oak barrels w/ natural yeast; aged 9 months on lees in ½ barrel and ½ stainless steel. Biodynamic as well.

It all started in the middle of the nineteenth century when French negociants visited the Rioja region to find alternative sources of quality grapes to transform into wine, since the phylloxera epidemic had decimated their vineyards. The founder, Don Rafael López de Heredia y Landeta, a knowledgeable and enthusiastic student in the art of wine making, followed closely in their footsteps.
Don Rafael fell in love with the region and especially the area around Haro, the mythical capital of the Rioja Alta region. He observed that there was a magical combination of soil and climate that would offer the perfect environment for producing wine that would eventually become world famous. Around 1877 he began the design and construction of the complex that is today known as the López de Heredia bodega (winery), the oldest in Haro and one of the first three bodegas in the Rioja region.
Wittmann Riesling Trocken Estate

Wittmann is a highly regarded producer whose history dates back to the 17th century. The current winery was built in 1829 but the winemaking employs state-of-the-art viticulture. The vineyards are certified biodynamic and fermentations rely on natural yeasts. The fruit is manually harvested and sorted and all the press wine is transferred to tank via gravity flow. Wittmann has been highly awarded in the German wine press, and now produces some of the most coveted wines produced in the country.

Meyer is one of BC’s top wineries focusing on small premium Chardonnay and Pinot Noir. Each wine reflects the single vineyard of its origin, the soil, the meso-climate, the aspect and the people that hand tend the vines. All wines are Hand-harvested and hand-crafted, with great attention to detail and minimal winemaking intervention. Meyer Family Vineyards wines are produced from two main vineyards, the 1.62-hectare “Old Main Road” vineyard on the Naramata Bench and the 6.9-hectare “McLean Creek Road” vineyard in Okanagan Falls. The McLean Creek spends 11 months in French oak (22% new). Easily one of the best Chardonnays produced in Canada.
Bulliat Beaujolais Blanc

The father-son team of Noël and Loïc Bulliat is currently in charge of the family estate. Loïc is the seventh generation to operate the domaine. There have been many changes with the acquisition of parcels since its creation in 1780, with vineyards now covering over almost 28 hectares distributed over eight appellations, including five “crus”, Morgon, Fleurie, Chénas, Chiroubles, and Moulin à Vent. Concern for the environment, respect for nature and the desire to express the terroir led the domaine towards the conversion to organic viticulture in 2010.
This crisp and lively Chardonnay seems purpose-built to convert anybody still firmly entrenched in the ABC (Anything But Chardonnay) movement. As the name Sur La Granit implies, this organic white wine boasts plenty of minerality and citrus zing to keep things interesting. Yet like most of father & son duo Noel & Loic Bulliat's wines, it remains in the 'dangerously crushable' category. Try pairing it with seafood salad, a light pesto pasta, or a bottle of Vignoble Bulliat's Beaujolais Rouge.
