"Written in the Welsh language in the 11th century, The Mabinogi are the earliest prose work in the history of Britain. They were transcribed from the oral tradition and have since been translated into many languages. The Mabinogi is generally agreed to be a single work in four parts, or ‘Branches.’ The interrelated tales deal in mythology, history, political themes, romances and magical fantasies.
The stories feature strong women characters, and none are stronger than Rhiannon – an enchantress and a horse goddess who could ‘out-run any pursuer even whilst riding slowly’. She was famed for being intelligent, generous, strong-willed, otherworldly, adept at strategic planning and gifted with both supernatural and physical powers. On her journey Rhiannon uses magic to rid herself of a suitor, is falsely accused of infanticide, and later becomes one of only four survivors of a magical thunderstorm. Rhiannon in Welsh means ‘Great Queen’ or ‘Divine Queen.’ Her parents were the Fairy King and Queen of Gwent (in reality a sizeable Welsh Kingdom of ancient Britain), who educated her to handle sovereignty and governance. Rhiannon also possessed a number of magical birds who could soothe the living into a deep slumber, or wake the dead from eternal sleep.
Rhiannon later became the subject of Stevie Nicks’ song on the eponymous Fleetwood Mac album (1975): ‘She rules her life like a bird in flight…’ More recently Rhiannon has turned up in modern fantasy novels."

One of the first official releases from the new distillery carrying the Teeling family name is this Single Pot Still offering. It is made from a combination of 50/50 malted to unmalted barley and bottled at 46% after maturing in a combination of virgin American oak, ex-Bourbon and ex-Sherry casks.
What is Single Pot Still Irish Whiskey you ask? It is whiskey made using a combination of malted and unmalted barley. Why do this you ask? Why, to dodge unfair taxation, of course! The Malt Tax came into being in Ireland for a short time starting in 1785, enforced by the (insert expletive said in your best Irish accent here) English. The Irish, being Irish, decided that they didn't need to use malted barley for the entirety of the mash used to distill whiskey and started adding portions of unmalted barley. Necessity being the mother of invention, this eventually became a legitimate style of whiskey-making that is now not just celebrated but codified into law in Ireland with the Single Pot Still Irish Whiskey classification.

This Single Malt Whisky from Cotswolds Distillery was aged in ex-peated quarter casks (hmm, which distillery could those be from...). The peated casks lend nuance and, well, notes of peat to the unpeated Cotswolds Whisky.
Quarter casks, to be exact. These 125-litre casks typically offer big flavour and influence on the maturing whisky within a shorter amount of time when compared to a full-size 200 Litre Barrel or 250 Litre Hogshead. Big wood influence, yeah, but don't expect this to be a peat monster, by any means.
It's also pretty cool that this is all floor-malted local barley (Anchor and Fermentis varieties). Love the 'grain to glass' ethos!

A Solera is a maturation system based on fractional blending of younger spirits with older ones, developing character complexity. Each bottling holds a portion of whisky from the very first batch, like DNA. With every release, the whiskies gradually increase in age making each one unique. High Coast Distillery built a six-story Solera System in one of their warehouses. At the base are the Solera barrels, 225-litre Swedish oak barrels. Bottling happens at this level and the above 5 floors of ‘criaderas’ are bourbon barrels that hold 200 litres of whisky descending in age. The top criadera is the youngest where High Coast adds its proud distillate to mingle its way down - with barrels continuously topped up from the barrels above. Maturing through years of relentlessly cold winters, hot summers, and humid falls, this bold single malt whisky emerged."
