To make it, we blended two spontaneously fermented ciders aged on cherries and strawberries, and added almost one tonne of red wine skins (Maréchal Foch) for an extra few months of skin contact. It's a red fruit bonanza, and our most popular bottle for good reason."

This is Grant Stevely's classic Noteworthy Gin, at Navy Strength, 57%. Distilled at his Dubh Glas (Douglas, in Gaelic form) Distillery in Olivery, British Columbia. It is Stevely's classic cocktail gin at a much higher strength, and in a cute 375ml bottle!
From the producer: "Our award winning Noteworthy Gin is our initial signature release which is a hand-crafted, small batch gin made from 100% British Columbian grown barley, carefully fermented in stainless steel and then transferred to our German copper pot still. After three precision distillations – two to clean the spirit and one to infuse our botanicals, it is then both hand bottled and labeled allowing constant monitoring of the quality control process.

"The Bindi Dixon Pinot Noir is based upon declassified grapes from the Original Vineyard planted in 1988 and grapes from the new Block K, planted in 2001. The ideal of this wine is to produce a delicious, perfumed, spicy harmonious, textured wine that is not as intense, complex nor ageworthy as our individual vineyard wines. Even when the outstanding Block K vines are older we will continue to declassify sections or barrels from each vineyard and produce this wine.
The wine is fermented the same way as our other Pinot Noirs in that it is ostensibly 100% de-stemmed and gently worked in small open vats. The wine spends 11 months in French barrels, of which about 10-15% is new.
Production varies from 500-700 dozen per vintage.

Teeling Single Malt Irish Whiskey

This single malt is produced from the legacy stock the family took after selling their first distillery, Cooley, to Beam Global (now Beam Suntory). The whisky has no age statement but consists of whiskies of different ages, the oldest of which were laid down into oak in 1991. The whisky is matured in American oak but finished in five different wine casks: (Sherry, Port, Madeira, White Burgundy, Cabernet Sauvignon). The whisky is bottled at 46% without colouring or chill filtering.
