One of the first official releases from the new distillery carrying the Teeling family name is this Single Pot Still offering. It is made from a combination of 50/50 malted to unmalted barley and bottled at 46% after maturing in a combination of virgin American oak, ex-Bourbon and ex-Sherry casks.
What is Single Pot Still Irish Whiskey you ask? It is whiskey made using a combination of malted and unmalted barley. Why do this you ask? Why, to dodge unfair taxation, of course! The Malt Tax came into being in Ireland for a short time starting in 1785, enforced by the (insert expletive said in your best Irish accent here) English. The Irish, being Irish, decided that they didn't need to use malted barley for the entirety of the mash used to distill whiskey and started adding portions of unmalted barley. Necessity being the mother of invention, this eventually became a legitimate style of whiskey-making that is now not just celebrated but codified into law in Ireland with the Single Pot Still Irish Whiskey classification.

"Cincoro Reposado gains its remarkable aromas and taste from a very unique aging regimen. Our barrels are imported from Kentucky, and were first used to age Bourbon. By aging Cincoro Blanco in these barrels, we highlight the smoothness of our Blanco, complimented by wood notes from aging 8-10 months in an underground cellar, considerably longer than the minimum 2 months required for Reposado. On the nose Cincoro Reposado has amazing notes of vanilla, baking spices, and toasted oak. On the palate, sweet cooked agave, caramel, white chocolate."

This Single Malt Whisky from Cotswolds Distillery was aged in ex-peated quarter casks (hmm, which distillery could those be from...). The peated casks lend nuance and, well, notes of peat to the unpeated Cotswolds Whisky.
Quarter casks, to be exact. These 125-litre casks typically offer big flavour and influence on the maturing whisky within a shorter amount of time when compared to a full-size 200 Litre Barrel or 250 Litre Hogshead. Big wood influence, yeah, but don't expect this to be a peat monster, by any means.
It's also pretty cool that this is all floor-malted local barley (Anchor and Fermentis varieties). Love the 'grain to glass' ethos!

They started planting vineyards in Colchagua, eventually building a winery in Santa Cruz after years of selling bulk wine to large producers. The Colchagua Valley is located in the Central Zone of Chile. It's a 'transverse valley", which means that it is a valley formed by a river, in this case, the Tinguiririca, running east-to-west towards the ocean. After all the stylistic and methodical experiments, I focused on the essentials while dotting my F & K with a bigger mission than before: since 2020, they embodied my vision of traditional, balanced and layered wine from my village. Don’t get me wrong, I still love all the past vintages of Forks, they all hold an important place in the evolution of this wine. But the Forks I want to make now should be more of a “village” wine in the best sense of the word, reflecting our precious Bilovice loess in the case of this white. (The red one showcases the richer clay soils of Moravský Žižkov.) These wines are a great introduction to our area and great value for money, given the vineyards we use here – all are at least 25 years old and include some of our top-notch sites otherwise used for our top-shelf White Labels.
