This Junmai sake is made from Kyoto-grown Iwai rice, polished to 70%. It brings out the full flavour of Iwai, and unlike Junmai Daiginjo and Junmai Ginjo, it retains its flavour, richness, and moderate aroma, and has an exquisite balance of spiciness, It maintains its strong flavour at various temperatures, including refrigerated, room temperature, and warm."

Winemaker Sylvain Gauthier cares for his vineyards according to organic practices, yet the estate is not certified. (Sylvain plans to pursue certification in the near future, however.) Vineyards are plowed either by horse or by hand. Vineyard holdings include small, steeply graded plots in the communes Sarras, Arras-sur-Rhône, Vion, Ozon and Saint-Jean de Muzols, all located in the southern portion of the Saint-Joseph appellation. The original boundaries and villages of the Saint-Joseph appellation (drawn in 1956) are located here in the south. Sylvain also maintains parcels of Viognier. Wines are filtered but not fined.

This year’s release is a blend of 24, 18, 12, and 8-month Bourbon Barrel-Aged Dark Star in 7-12-year old Kentucky bourbon barrels. The roasted and chocolate malts complement the smooth oats to bring you a stout delight wrapped in the gentle embrace of bourbon barrel-aged warmth.
A touch of sweetness dances in balance with the hops to finish with a wave, and then she’s gone.
Down & Dirty: 2-Row Pale, Roast Barley, Crystal-60, Chocolate, and Carafa-2 malts with Flaked Oats and Columbus, Willamette, and Cascade hops.

Color: Deep black, opaque
Aroma: Brown sugar, caramel, chocolate, molasses, and cola, along with other sweet aromatics. Followed by some burnt sugar, whiskey, date & oak.
Flavor: Mild sweetness and lightly bitter. Medium body, some warming, no spiciness, some tingling carbonation, no astringency and slightly mouthwatering.
