Made from a mash of corn, wheat and malted barley. Aged between 7 to 9 years in heavily charred virgin oak before being bottled at 45%.

Courvoisier XO is made from carefully selected and aged eaux-de-vie from the Grande and Petite Champagne regions of Cognac in France. These parcels are aged between 11 and 35 years before being blended and married together before being bottled at 40% ABV.
As of March 31st, 2019 a Cognac must be aged for a minimum of 10 years to be given the XO designation.

Mouchão is a full, deep coloured wine with its concentration and spiciness of the Alicante Bouschet combined with the elegance of the Trincadeira and a tannic structure which enables the development in bottle for which it is so well known.
This has been the estate's most important label and flagship wine, since it sold its first bottle in 1954, and for which the Herdade has become famous. It is made predominantly from Alicante Bouschet with a small percentage of Trincadeira and vinified in lagares. It is aged in oak and mahogany vats of 5.000 liters capacity for 24 months and only released after further 24 to 36 months in bottle in their air conditioned cellars.

Medium ruby in color, this wine is beautifully aromatic. Juicy red fruit- fresh cherries, strawberries, currant, and a subtle hint of tobacco, black licorice, and pencil shavings. On the palate, this wine may be the most true-to-form Doubleback we have made yet — pure unadulterated elegance, but richness and balance to back it up with an uber long finish. Sandalwood, red rose petal, fine grained tannins — approachable now but will age gracefully for the next two and a half decades. 2016 is proving to be an incredible year in Walla Walla. This will only get better with time, drink now through 2041.22 months in new and second fill French oak barrels and puncheons.

This table saison is light but semi-rustic, made with oats and rye. Fermented with a lightly farmy, but fruity yeast, and hopped to enhance and compliment that fruitiness. One of Four Winds best in my opinion!

From Brouwerij Verhaeghe Vichte, this is THE classic Flanders sour. This Flemish brown has a cider-like tartness with a nice rich, and lightly sweet malty body. Though through and through, this is a funky sour. 6.2% ABV

"Duchesse de Bourgogne” is an West-Flemish red brown ale of mixed fermentation. It is a sweet-fruity ale with a pleasant fresh aftertaste. This ale is brewed with roasted malts and with hops with a low bitterness. After the main fermentation and the lagering , the “Duchesse de Bourgogne” matures further for many months in oak casks. The tannins in the oak give the “Duchesse de Bourgogne” its fruity character. “Duchesse de Bourgogne” has a full, sweet and fresh taste : it is a ruby red jewel of 6.2 % alc. vol., that best is served in a chalice-shaped glass between 8 and 12°C."

Silky, sweet and goes down easy! Wonderful chocolate notes all over this milk stout. The addition of lactose gives just enough sweetness to really round out the style and provide just enough sweetness to lift the cocao notes and stand up to the bitterness on the finish. A very well balanced stout!
