In fact, we use 40% first-fill Sherry butts in the mix, and the result is a truly charming Malt with a richly spiced character, fused with vanilla (from the bourbon casks used), sweet stewed fruit, Christmas pudding, dark chocolate, zesty orange and sweet tobacco. Like the Knob Creek Small Batch, the Single Barrel version purportedly uses Jim Beam's 'Low Rye" mash bill of about 75% Corn, 13% Rye, and 12% Barley.
