Elvio Cogno PF Barbera
$114.99
Produced from one of the last archaic vineyard of Langhe region, an open-air museum from a time gone by, with vines older than a hundred years. The vines are onto 100% Vitis Vinifera roots and replicate by propagation. They have therefore maintained, over the decades, the original Barbera characteristics. The small plot, situated in Berri near La Morra, has an excellent exposure and sandy-chalky terrain which guarantees a natural protection from Philloxera. This mixes with the intriguing vine resiliency and its most typical charms imparted from the microclimate and a particularly favorable altitude. The low production per hectare guarantees an intensely rare and rich organoleptic concentration. The wine is refined in oak casks which slowly develop all primary aromas. Pleasant and refined, complex even as a young wine, it is not afraid to be aged in bottle, expressing its solid uniqueness even over the years.
Tissot Savagnin Sous Viole
$101.99
Domaine Tissot was founded in 1962 by André Tissot and Mireille his wife, we are in Montigny-les-Arsures a neighboring commune in Arbois one of the most representative towns of the Jura and qualitatively one of the best areas.
André's goal was to produce wines in the respect and enhancement of the territory with a "traditional" approach. But the real turning point came with the arrival of Stéphane Tissot, son of André and wife Bénédicte. Stéphane returning from important training experiences abroad immediately began to bring organic practices to the winery until complete conversion within a short time, this was the 1990s.
Today the Domaine has 35 ha cultivated according to the principles of biodynamic agriculture, and a production of incredible wines of territorial identity.
Tissot Arbois Rose Massale Chardonnay
$101.99
Domaine Andre et Mireille Tissot, begun in 1962, is in Montigny-les-Arsures, just a few kilometers from Arbois. Stéphane, their son, took over in 1990 and has slowly but surely established the Tissot name as an important one in the history of Jura wine. A tireless vigneron, Stéphane farms between 45 and 50 hectares biodynamically, travels to distant lands as a spokesperson for the Jura, makes numerous different cuvèes, and is intimately familiar with each of his terroirs. After taking over from his father, André, as the head of the family's estate, Stéphane quickly began leading it in a new direction, eliminating the use of selected yeasts and pushing the farming towards organic methods, a decision he made after meeting Nady Foucault of Clos Rougeard. The domaine received organic certification in 1999, and biodynamic certification 5 years later. Thanks to Stephane's tireless work, the Tissots are regarded as one of the most important producers of the Jura, and their belief of and focus on well-farmed, well-made wine has never wavered.

A blend of barrel-aged golden mixed culture beers with strawberries
6.1% ABV
Wild Beer Release: 032
We ain’t seen anything so pretty as the opaque, perfectly ruddy rose gold contained in these bottles. And, lucky for everyone, it tastes just as stunning. This blend of barrel-aged mixed culture beers smacks of freshly picked, perfectly ripe strawberries. Basically, it’s a dream of summer realized in winter.
Strawberries, while singularly tasty, can be terribly tricky to brew with. But sometimes, the trickiest ingredients make for the treatiest beers, so it just made sense to brew this to be 40% strawberries by weight. First, we selected three different base beers to experiment with: one Lambic-inspired, one a mixed culture Saison, and one a Brett Saison. Then we refermented each barrel on the fruit in isolation before blending the three to taste—and taste they do! Turns out, individually hand-processing a whole pallet of strawberries until 1 am pays off.
In addition to the strawberries that are the absolute star of this show, those who drink of Rare Hearts will be treated to balancing beats of pleasantly bitter hops, subtle acidity, and just enough funk to keep things spunky. Get your hands on a bottle of this atypical libation or try a spurt of it in our taproom.
Radford Dale Pinot Noir
$54.99
An organic estate in Elgin, around 40 miles southeast of Cape Town. Elgin is a very different climate to Stellenbosch, where the rest of their wines are made, a particularly critical factor for organic farming. ‘Our biggest challenge is mother nature. Living on a knife edge in a high-rainfall, cool climate region such as Elgin is not good for the nerves.’ says Alex Dale. ‘It would have been safer to farm organically in warmer areas, such as the Swartland or even Stellenbosch. But for the style of wines we like – more refined, fresh and balanced – Elgin is where we want to be, so the risks are far higher. The next biggest challenge is financial, as your production and your financial viability is constantly threatened by weather incidents, throughout the year. We also do a lot of work manually, especially in our high-density vines, so the tougher the conditions meteorologically, the more manual labour involved in the vineyards.’
