Producer Description
Mexcalia is a Mezcal made 100% of Agave Espadin using a combination of traditional and modern method of distillation. The only difference mainly is the process of roasting the agave fruit. When mass production is done, roasting the agave fruit in underground pits is practically impossible as this is done for small batch by small artisanal producers. Our roasting method is done in industrial sized ovens before proceeding with a traditional crushing and distilling method. This is the case of any large volume mezcal brand."

Confluence is a fairly new distillery in Calgary. This is their first run of a Pink Gin, with includes grapefruit, bird's eye chili, ginger and chamomile amongst the botanicals. Bottled at 41% ABV.
Producer Tasting Note
Nose: An inviting nose of grapefruit, chamomile and lemongrass is present. Pink hue is from macerated hibiscus rose.
Palate: Upon tasting the citrus comes forward combined with a subtle spice of chili peppers and ginger, with a velvety mouthfeel. chamomile comes forward in the body, alongside the vanilla notes from lemongrass.
Finish: Lingering chamomile and juniper cleanses the palate, inviting the imbiber for another sip.
