Gallina de Punk is a new brand by David Seijas (ex-sommelier at elBulli) and was born from all the experience accumulated to create concepts beyond the conventional world of wine. Our creative process acquires a provocative will seeking to reach beyond the known limits, rejecting dogmas, freeing ourselves from stigmas and disturbing the established.
NEVERWINE is our first project, a proposal of non-alcoholic wines for all audiences, a tribute to some native grape varieties of Spain that we are crazy about! More than 15 years ago at elBulli we already detected that around 3.5% of customers did not drink alcohol. We present our first wine Alc. 0% Vol. for all those who cannot drink alcohol or want to lead a healthy lifestyle
Neverwine – Smells like Albariño
A white wine inspired by Albariño. This is our fun recipe based on real events! #nohoproveuacasa
– 5Kg of red peaches
– 2 crushed limes
– The juice of 1 orange
– 1 acacia branch
– 2 long leaves of deep green citronella
– 1 tablespoon of honeysuckle flowers
– 10g of dried orange peel, very aromatic
– 2 thin slices of a very red grapefruit
– 1 bergamot cut into cubes. Press to extract the pulpy interior with an addictive sweet and sour flavor.
– 100ml of green apple juice
Macerate everything with respect and a lot of affection for 5 hours. Filter and serve every day!

"Our Sparkling Lime & Yuzu is made with Tahiti lime from Mexico’s fertile groves in addition to the wonderfully floral Japanese yuzu. We have created a lower calorie soda that’s perfect for mixing with premium vodka or tequila, for a mouth-wateringly zesty summer spritz.
Although both are citrus fruits, the Tahiti limes we source from Mexico and the Japanese yuzu yield noticeably different flavours. We selected this variety of lime for its superior taste profile that balances its signature sharp tang with a delicate sweetness. The yuzu fruit from Japan is renowned the world over for its incredibly floral flavour and it adds a wonderful lightness to the Sparkling Lime and Yuzu.
