My tasting note: "Nose: Orange notes, orange citrus, candied orange and dried orange peel; the waxy honeyed notes Clynelish is famous for come out with patience and some ginge spice; Palate: creamy and spicy with more candied orange, orange peel, dried ginger and thick-waxy-creamy-unpasteurized honey; the spices take over on the second sip with some dried fruits; Finish: coating, waxy and spicy fruits!"

My Tasting Note: Nose: mulled wine, wet leather, dark chocolate shavings and cooked raisins; floral heather-honey-and undertones of American oak can be found below the port notes; Palate: very earthy-musty, like a Dunnage floor warehouse; medium dark chocolate notes are present but a little thin; faint tannins, shoe leather, candied fruits and more mulled wine emerge in this relatively dark palate; Finish: drying with a little bit of spice, the chocolate, fruits and everything but the leathery tannins and oak have faded away.

De Ranke is a Saison brewery that especially built their brewery to use whole hop flowers in their beers. Many of their beers are blends with lambics, but this one is a straight saison. It has a yeasty aromas, with citrus, malts, and flowery hops. These aroma characters are also present in the flavour to make a well balanced palate.

The Cuvee is an ale of mixed origin like many Belgian breweries used to make. De Ranke brews a red-brown ale, which is then aged for six months, then blend in a lambic from Brewery Girardin. It's a naturally acidified ale in which the brewers strive to reach the perfect balance between sweet and sour. This amber-coloured ale contains 7% by volume alcohol and can age well.

Tilquin is a traditionalist lambic blender and learned his craft brewing and blending at two of the great lambic breweries: Drei Founteinen and Cantillon. Tilquin uses Boon, Lindemans, Girardin lambics and is the only blender to get Cantillon for his blends. The aromas are light fruits and funky yeast. The palate has tart citrus dominating with some malt sweetness to balance.

"Gin has never had an age statement. However, in the 1850s, gin was transported, stored and served in wooden barrels rather than a bottle. Drinking establishments, called Gin Palaces were common place all over London and gin was served from the barrel. Hayman's 1850 Reserve is distilled in batches of 5,000 bottles and each bottle is individually numbered alongside the batch number."
