After 21 years in a Refill Hoggy this Lowland whisky is still 54.6%. 

Panel's Tasting Note: "The room was instantly filled with sweet fruity scents - bruised apples, pineapple, set honey; mellow, rich and opulent: Eve's Pudding (apple topped with soft sponge), or even tarte tatin. The taste at full strength was not so rich: sharp, after a sweet start – one panellist was reminded of 'strawberry flavoured cornflower.' Water raised soft pastry, tinned pineapple and baked apple, with some dry straw and boiled sweets (travel sweets dusted with icing sugar), and the taste is now much improved: soft and smooth, with light sweetness, a spicy finish and an overall taste of fresh mandarins. Atypical of the make from our southern-most distillery."

This 29 year old Speysider is from a Refill Sherry Butt at 53.7%.

Panel's Tasting Note: "Without water this warm and comfortable malt delivered rich dark chocolate and raisins on the nose. There was a hint of freshly planned wood shavings; echoes of the boat builders' art in times past. The unreduced palate was hot and urgent, smoky and mouth watering, while the after taste revealed dried fruits and just a whiff of tobacco. The addition of water freed more sweetness on the palate; sticky toffee pudding with a rich home made vanilla custard and heather honey straight from the jar. On the nose a new confection; sweet tobacco and oil of orange wrapped in velvet coat of dark chocolate."

Drinking Tip: "After the party in the big comfy chair."

This Ileach single cask has been bottled at 60.4% from a First Fill Barrel after 8 years. 

Panel's Tasting Note: "You're in a fabulous pavilion - soaking in a bubble-bath – sweetly peaceful. Nearby, a platter of exotic fruits (pineapple, papaya, lychees) and a dram of this. Across the room there's a fire of fragrant pine cones. Outside, the eighteenth green of the world-class golf course that you have just completed way under par. The door opens and another serving girl appears with poppy seed biscuits, Italian fennel-flavoured salami and a beaming smile. You are tired but still feeling strong and proud of your achievements. Everything is in balance and harmony - the dream, the feeling, and the evocative scents and flavours from this 'small headland' dram."

Panel's Tasting Note: "Although this was an initial blast of peat smoke, smoked bacon, vegetable oil, brine (from hot dogs) it was sweet and delicate. There was toffee dust (the stuff you find at the bottom of a big jar from the sweet shop), white bonbons, all interlaced with a mineral character. Big, salty, smoky, and earthy to taste but a delicate perfumed herbal note gave the impression of lightness. Water stabilised this gentle impression; now it was nutty, grassy, herbal and more perfumed although the smoky bacon was still there. Liquorice, walnuts, pine resin and salty ash were added to on the palate Whisky pictured at right is a sample image."

Matured in a combination of American white oak casks and Spanish Oloroso sherry casks this whisky is unusual for its light touch of peatiness - a reminder of a time when Glenmorangie dried its barley in a peat fired kiln.

My Tasting Note: Nose: Islay malting floors, tun rooms and fireplaces; surprisingly soft for 60% and not as aggressive as our Fresh Bourbon Cask last year; wood shop, smoky barley and steamed mussels in a salty broth; damp liquorice root, dark mint chocolate and earthy spices; Palate: bigger, earthier, sweeter, smokier and spicier than the nose prepared me for; this is more elegant than the Fresh Bourbon cask last year, but it is still full on; sweet barley sugar, Bat Black Liquorice ice cream, and thick salty smoke; the spices are rich and dark, unsweetened bakers chocolate and woody-earthy peat; Finish: huge, long and robust; the dark earthy peak makes its presence felt along with salty smoke, liquorice and more earthy spices; the finish lasts an incredibly long time fading into sweet peated malt.
