Blending Notes
"The base of this whisky was really three barrels of 11 year old 100% peated whisky we had particularly enjoyed during sampling. It had a very classic peat smoke profile but also a really mature backbone of oak and even a measure of banana custard that was really intriguing. A couple of younger and lighter whiskies were used to buoy those flavours and give them enough space to shine. Peat is still the dominant flavour in this whisky but it’s balanced. The whisky is 71% peated but I’d say it drinks like less than that just because it’s being balanced out a bit."

"Smallest portion of this blend was a blend of peated whisky that had seen mostly bourbon barrels with a bit of new oak mixed in. Then some wheat whisky that was in new barrels for 5 years then second fill bourbon for 5 years. Finally the largest portion of the blend is a mash from 2013 that had been sitting in the same virgin oak barrels for 11 years."

Yukon Brewery resides in Whitehorse, where it was originally founded under the name Chilkoot Brewing. In 2009, a still was installed. Whisky under the name Two Brewers was first released back 2016. Since then, Two Brewers has kept to a small batch release ethos, where no release is exactly the same as the last.

The first of four whiskies to be released in the Extinct Blends quartet, Ultramarine is inspired by old bottlings of Johnnie Walker Blue Label. Composed of Caol Ila, Glendullan, Cameronbridge, Grivan, and much more. The whisky is bottled at 51% and is an homage to the deluxe Blends of the 1980s which were strongly influenced by notes of antique-y sherry and pipe tobacco.
