AN ENTIRE MOUTH EXPERIENCE
This 10 year old from Islay comes in at 62.2% after maturing in a refill barrel
Flavour profile: Oily & coastal
Outturn: 195 bottles
Panel's tasting note: "We found the nose sweetly seductive – toffee apples, gooey caramel, dark clover honey, biscuits and toasted coconut with faint suggestions of beach bonfires and seared scallops. The palate was impressively mouth-filling – chewy textures, good viscosity and lively fizz – ‘an entire mouth experience’ said one panellist; once again, that sweetness of toffee, butterscotch, dark chocolate and salted caramel. With water, the nose remained vibrant – ice-cream and raspberry sauce by the seaside. The (slightly) reduced palate still danced on our tongues; sweet and salty popcorn and dark chocolate with caramel and sea salt – hints of sweet cinnamon and tar tingled the finish."

Distiller's Tasting Note
Nose: Black Cherry, Sherry Trifle, Marmalade, Tea Rose, Rum & Raisin Chocolate.
Taste: Burst of sweetness changing quickly to Plum compote, Cinnamon, Cloves and Tangy Marmalade.
Finish: Soft Oak dryness and Cinnamon.
Distiller's Description
"Our finest sherry casks are left almost entirely to their own devices for 30 years. Almost, but not quite. Twice, perhaps three times in three decades, our malt master will taste this ongoing alchemy of cask and spirit. His aim: to hand-select only the best sherry oak casks.
"Has each decade added deep colour, intense flavour and limitless complexity to the precious contents? A small wooden bung is all that stands in our malt master’s way; in the cool of the warehouse, he eases it from the cask. He holds a dram to the light, swirls it beneath his nose, takes a sip – then records his judgement. Only the very best can become Glengoyne 30 Year Old – typically just 13 casks a year will bear the name."
GlenAllachie 10 Year Cask Strength Bt 1
$104.99
Part of the first release of official The GlenAllachie bottlings since Billy Walker & Co. took the helm. Only a small amount are coming to Canada of this cask strength bottling. Bottled at 57.1% it was matured in a mix of American, PX, Oloroso and Virgin oak.
Evan's tasting note on Batch 2
Nose: big cereal and grain, newly sanded lumber, peaches and cream, pickled ginger, sliced pears, sesame seeds, cake fondant and white chocolate.
Palate: juicy and creamy with lots of fruit and big spice notes at the front along with beer nuts, cashews, toasty and also green oak, honeydew melon, pineapples, sweet Thai chili sauce and spicy ginger.
Finish: spicy but sweet with a nutty note thrown in. It creates a warming sensation with a pleasant creaminess on the fade.
Comment: the spice is big but the sweetness and helps tame it. It tingles the tongue but stays deliciously approachable.
Distiller's Tasting Note
Nose: Big notes of heather honey and toffee, with rose hip and spices tip-toeing in.
Palate: Honey, vanilla, toffee with a layer of rose hip, marmalade and Caribbean spices.

"Billy Walker spends endless amounts of time in the GlenAllachie warehouses sampling across our range of casks, with over 40,000 on site it’s not a job for the faint hearted. However, it’s certainly time well spent when the results of his endeavours are tasted.
"After sampling this vast range of casks Billy was keen to showcase GlenAllachie bottled at natural strength. We are delighted to introduce the GlenAllachie 10 year old Cask Strength Batch 1 – a limited edition product bottled with only 2,000 cases available worldwide."
GlenAllachie 1978 Cask 10296 50th Annv
$1,449.99
One of six single cask releases bottled in 2018 to celebrate the 50th anniversary of one of Scotland's younger distilleries. The brand has finally been given center stage under the direction of former BenRiach owner, Billy Walker. Billy comes armed with some of his most loyal team from the old distilleries and decades worth of distilling and blending experience. It doesn't hurt that his purchase of the GlenAllachie distillery included maturing stocks of approximately 40,000 barrels of whisky. A very special half dozen of said casks were chosen for bottling to commemorate the milestone. And all are spectacular.
55.9% abv (500 ml), natural cask strength, uncolored, non-chill filtered.
