Panel’s tasting note: “With this whisky the panel were transported to an alpine cabin. On the nose they fancied pork crackling with red currant jelly and tom yam paste. Rich sherried notes of crème brûlée and ginger snaps. One was reminded of hot ski wax. To taste they found a meaty feast of biltong, paté on rye toast and coq au vin. It was as if a pan had been deglazed with Grand Marnier or trappist beer. With water, hot chocolate and tangerines in brandy developed. A leather pig skin football was kicked about. A curious and quirky dram.”

Springbank is Scotland's most traditional and oldest family owned distillery. The core namesake expression from the Springbank distillery is two and half times distilled and lightly peated.
Distiller’s Tasting Note
Nose: A sherry explosion with winter fruits, spicy gingerbread and a hint of peat.
Palate: A winter warmer. Dark orange chocolate, Christmas cake and brandy snaps. Honey and spices develop over time.
Finish: The finish is long and smooth. Espresso coffee, liquorice, marzipan and sherry conclude the tickling of the taste buds.

This Batch 11 Vintage bottling from BenRiach was distilled in 1977, was finished in a dark rum cask 1891. Bottled at 43.2% after 36 years only 6 bottles of the whisky have come to Canada, exclusively to KWM.
Distiller's Tasting Note:
Nose: Succulent cane sugar spills over roasted orchard fruits. A lingering toffee and biscuit note gives added depth.
Taste: Demerara and boiled sweets burst on the palate and seamlessly soften to waves of toffee and vanilla. Barley-dusted stewed gooseberries give a great contrast and balance throughout the palate.
Balvenie 25 Year Single Barrel

Balvenie takes its single barrel line up a notch! Released for the first time late in 2014 each bottling is one of just a few hundred bottles from a given cask, never more than 300, matured in Refill Ex-American oak casks and bottled at 47.8%.
From the Distillery: “The Balvenie Single Barrel Traditional Oak is characterised by subtle spices and rich honeyed sweetness and Malt Master David Stewart only selects casks of whisky for bottling that have the character he expects of Balvenie matured for 25 years exclusively in American oak. However, no two casks will ever produce an identical single malt. As such, the single malt from each cask of Single Barrel Traditional Oak Aged 25 Years is unique and no more than 300 bottles will be filled from any one cask. This is reflected on the bottle label - hand numbered and carrying the distillation date, bottling date and cask number in which the whisky was matured.”

Distiller's Tasting Note:
Nose: Oven roasted red apples with caramelised Muscovado sugar warmed by fragrant toasted allspice and peppercorns.
Taste: Fairground candy apple, cinnamon and delicate ground black pepper mellow to touches of fig, sultanas and stewed sweet barley.

Distiller's Tasting Note:
Nose: Dark, smoky wood notes fill the nose and flood through a distant prune and sundried raisin fruit character.
Taste: Subtle earthy peat reek and a lingering aged oak note give an elegant quality to the unique peated character, which holds rich fruitcake, cinnamon and warm oak spices."
