Profile: "Lightly peated."
Panel's Tasting Note: "The panel was in unanimous agreement this was as good as it gets. Imagine dipping ginger nuts in rich creamy latte with strawberry syrup. Throw in mint chocolate ganache and bramble jam. Old leather books in a library and waxed church pews with a puff of hickory smoke. The taste was of toasted marshmallow and peppered tuna steak. Ginger snap baskets with red berries and a drizzle of honey. Our American described her bizarre habit of dipping French fries into chocolate milk shake. On the finish, Coco Pops and crème caramel. The panel thought it must be using fake ID."

Bottled at 56.3% from a single refill Ex-Bourbon hogshead after 20 years.
Panel's Tasting Note: "The nose of this ‘Sound of Islay’ dram offered fish boxes, lobster pots and tarry driftwood, beach bonfires and peat smoke – we also found heather, iodine, hospitals, roasted peanuts, nutmeg, cinnamon and lemon oil. The palate was a classic intense mix of sweetness and smoke – some tar, clean oil, macadamia nuts, smoked paprika and prawn tempura, with a long, liquoricy after-taste. The reduced nose introduced a powerful floral note (Little Shop of Horrors?) and a mineral element (our scientist-turned-blender remembered drying jelly-fish on rocks). The palate now held smoky bacon crisps, acid drops, ash, charcoal and lime squeezed over scallops."

The Fino is Kavalan's top of the line whisky available in Canada, bottled from single Ex-Spanish Fino Sherry casks at cask strength. Fino sherry is the palest and one of the dryest styles of sherry but the effect the barrels have on the whisky is to enhance the sweet fruity notes.
Producer's Tasting Note
Nose: rich aroma of sherry, with creamy toffee and fudge qualities, and the slightest hint of chocolate blends with the fruity character of the spirit.
Palate: natural sweetness on the tongue is accentuated with a gentle fudge flavor. Complex fruity flavors are layered with dry smoked wood aromas.

SWEET AND DARKLY BEGUILING
A 14 year old Japanese whisky from a closed distillery at 58.6% after maturing in a Refill Sherry Butt.
Panel's Tasting Note: "The sweet, dark nose was satanically beguiling – Demerara dregs in espresso, molasses, honeyed figs, flapjacks, blackjacks, sweet black tea and dark chocolate; eucalyptus, and pencil shavings came later. The palate – a salty, treacly, mouth-watering assault of tarry tobacco, garibaldis, thick orange peel, balsamic glaze and black bean sauce – squeaked the teeth and found the tannic in Satanic. The reduced nose became more savoury – jugged hare with prunes and hickory-smoked ribs. The palate had less tannic thrash but remained sweetly sinister, with Hoisin duck and a well-used leather tawse sacrificed in the glowing embers of hell. The distillery was once a vineyard."
Drinking Tip: "When feeling mischievous or watching horror movies - the palate definitely improves with water."
