3 Fonteinen Schaarbeekse Kriek is the result of macerating local hand-picked Schaarbeekse cherries on traditional lambik. No addition of juices, syrups or artificial sweeteners. Unfiltered. Unpasteurised.
For this Schaarbeekse Kriek, we macerated freshly picked local Schaarbeekse sour cherries for a tad less than twelve months onto two-year old lambik. The maceration happened on a small foeder. Some more jonge lambik was used to blend this fine fruit lambik. The weighted average age of this Schaarbeekse upon bottling is more than twenty months. The final fruit proportion is 372 grams of Schaarbeekse sour cherries per litre of finished Schaarbeekse Kriek, More than 80% of the grains used while brewing, were sourced in our own Cereal Collective.

Pietradolce Santo Spirito Etna Rosso

Santo Spirito Etna Rosso is a wine obtained from Nerello Mascalese grapes from a pre-phylloxera vineyard that was brought to light and restored during land reclamation work. This vineyard is located in the highest part of the Contrada Santo Spirito at 900 meters above sea level. It is a very windy promontory with marked temperature variations and sandy soils, with abundant volcanic rock.
The harvest takes place in the second half of October. The crushing and destemming is followed by a maceration of approximately 18 days in raw cement tulip tanks. The 14-month aging in oak barrels is followed by maturation in the bottle. The result is a wine with an ample bouquet, which alternates spicy notes with red berries. The taste is vibrant, with distinctive elegance and personality, like drinking a bottle of great Burgundy.

The Coravin wine preservation system has become the standard tool of the trade for wine importers and collectors alike. It allows you to draw measured amounts of wine from a sealed bottle while injecting a harmless inert gas blanket on top of the remaining wine. The claim is that it will preserve the wine for years, something we have not had the opportunity to put to the test, but there is no doubt the system works. Last week we tasted a top-notch Oregon Pinot Noir from Cristom that had been under Coravin gas for several months, and the wine was perfectly intact.
