Chimay Grande Reserve Brandy Barrel
$48.49
From the Chimay Website
"Chimay Bleue is a dark beer that gets better over the years. It combines aromas of fruit and chocolate, which transform into a sweet mocha with a spicy character.
Since 2015, Chimay has been honoring an ancestral method; proceed to a second fermentation of the Chimay Blue in wooden barrels.
This method provides exceptional flavors and a complex taste that varies according to the type of barrel used. This beer also goes through a third fermentation in the bottle.
The Grande Réserve barrel fermented is placed in a black bottle to improve the aging potential of the product. It is even better to taste with its special glass."

"We have our second collaboration beer with Freestyle available now! For those who aren’t aware, Freestyle Hops produces some of the highest-quality hops out of New Zealand (don’t sleep on this one). This year, as members of Freestyle’s Research Collective, we were given Manilita to play around with and report back our findings to the growers. This exclusive experimental variety was named after the manilita mango from Mexico. To showcase this one-of-a-kind hop, we decided to go big with a triple-dry-hopped hazy double IPA.

"Never before had any whisky distillery had the opportunity to peat smoke barley at their distillery and apply this to exploring the terrior of peat coming from Canada, the USA and Scotland, or peat infused with Pacific west-coast seaweed harvested by First Nations. Distilled using local barley peat-smoked at our distillery to 54 ppm with local peat from the Olympic Peninsula. It was then fully matured in a carefully selected Bourbon cask, blanketed with fresh maritime island air."

"Smooth, rich, and quietly complex. Up front, you get classic notes of caramel and vanilla, backed by a corn sweetness and a touch of oak. There’s a soft spice from the rye, layered cinnamon and orange peel, with just enough pepper to give it a little edge."
