Willi, who was born in 1949, made his first vintage in 1971, then still with his father. During Willi’s career, the Schaefer wines achieved an international reputation. The winery, as it exists today, is also the life’s work of Martha (1924-2013) and Willibrord Schaefer (1912-1995). In the difficult post-war period, they built today’s manor and farm buildings and produced, even at that time, outstanding wines. The family's vineyards are located in Graacher Dompropst and Graacher Himmelreich, as well as in Wehlener Sonnenuhr. The plots are located on steep slate slopes and consist of up to 100-year-old, ungrafted vines. Graacher Domprobst roughly translates to the Kingdom of Heaven. The Graacher Dompropst vineyard is classified as a VDP. GROSSE LAGE vineyard, the designation for the highest quality Mosel vineyards. Due to the topography, the kingdom of heaven is protected against wind and frost. In addition, the warming of the slate soil causes uniform and complete maturity. Many water veins ensure an optimal supply of moisture for the vines. Rieslings from Graacher Domprobst are typically silky and charming, in harmony with fine fruit acidity and minerality. The scent is often characterized by citrus, yellow and white peach. In addition, the clay content in the soil gives these plants their distinctive, powerful character. Giving them time to age will reward them with even more elegance and mineral finesse.

The 2021 vintage had some challenges that in the end resulted in small yields but very high qualit.y The wine is based on healthy grapes that were selected in the same way the Auslese is, and as there is some botyritis-affected fruit. The wine shows a precise, fresh and finely reductive nose of cut slate and just-ripe but intense and concentrated Riesling berry aromas. Pristine and highly elegant on the palate, this is a textured and savory, very delicate and filigreed Spätlese with yellow apple aromas and remarkably refined but striking acidity that is also just ripe and does its job brilliantly.

In 1921 Richard Mosbacher Snr. (1898-1977) founded the current estate together with his sisters and named it after their father Georg: 'Weingut Georg Mosbacher Erben' (Wine estate of Georg Mosbacher's heirs). The curved 'M' which decorates their wine labels up to this day goes back to these first years. Richard Mosbacher Jnr. took over responsibility for the cellars when his father Richard - a declared anti-Nazi - was appointed mayor by the Americans after the end of the Second World. The winery now produces some of the finest wines in the Pfalz and all of Germany for that matter. The grapes for this wine are grown on a south and southeast-facing vineyard, 60% of it slopes up towards the edge of the forest, while 40% is on the lower slopes, on soils composed of sandstone with limestone outcrops and basalt.
