The Espadin from Peloton de la Muerte is harvested then cooked for five days in lava rock-lined pits before being crushed and allowed to ferment for a further four days. It is then double-distilled in small 200 Litre Copper Pot stills. Bottled at 41%.

The maguey Sierrudo is an agave plant that is closely related to maguey Arroqueno, Sierra Negra, and Coyote. The Sierrudo apparently takes more than a dozen years to reach maturity and grows to an exceptionally large size. This was a special batch made by the legendary José Cortés in Santiago Matatlan, Oaxaca.
