One of the classic American Gins has a brand new look! Junipero Gin first hit the market in 1996, leaning into the juniper and citrus notes of a typical London Dry by amping up both. Also amped up is the ABV at a respectable 49.3%.
Junipero contains a dozen botanicals in all: Juniper, Angelica Root, Aniseed, Bitter Orange Peel, Cardamom, Cassia Bark, Orris Root, Orange Peel, Lemon Peel, Grains of Paradise, Cubeb, and Coriander.

Producer Tasting Note
Nose: Strong juniper core. Crisp and clean with bright citrus notes and herbal complexity.
Palate: Big structure with juniper at the forefront that opens up and reveals its full complexity in the finish with notes of lemon peel, cardamom and lemongrass.

"A tribute to the Prairie’s famed Alberta Rose, Parlour Gin is Eau Claire Distillery’s second release," according to the team at Eau Claire. "This London-dry style gin augments more traditional gin botanicals creating a juniper berry induced dryness, but with unique hints of rosehip, Saskatoon berry, coriander, lemon, orange, mint and spice. The first Israeli gin in Canada, comes from the Milk & Honey Distillery in Tel Aviv. It starts with the same malted barley base as the single malt, mashed in house and distilled in the same pot still. The botanicals are all source from Tel Aviv's Levinsky market.

Nose: Delicate notes of juniper berries, lemon and hyssop.
Palate: Delicate botanical tastes, with juniper and lemon being the dominant notes.
Finish: Medium-bodied, a little oily. Long, lemony finish.

"Our gin starts the same as our single malt series – 100% pure malted barley that’s mashed in-house and distilled in our pot still. Then we add a heap of Juniper and botanicals, hand-sourced from Tel Aviv's Levinsky market: hyssop, lemon peel, orange, chamomile, verbena, cinnamon, and black pepper. We then let the botanicals rest in the still for 48 hours and then distill for the third time in our 250L pot still, for extra smoothness. 46% abv./92 proof."
