Eau Claire's flagship gin. Eau Claire is Alberta's first modern craft distillery. It was founded in 2013 and resides in Diamond Valley, Alberta.
"A tribute to the Prairie’s famed Alberta Rose, Parlour Gin is Eau Claire Distillery’s second release," according to the team at Eau Claire. "This London-dry style gin augments more traditional gin botanicals creating a juniper berry induced dryness, but with unique hints of rosehip, Saskatoon berry, coriander, lemon, orange, mint and spice. A medium gin, it is dry with a smooth, harmonious texture and little harshness."

The Pimm's tradition is almost as entrenched in British culture as the cup of tea. Pimm's was invented in the 1840s, by the owner of an oyster bar in the City of London. James Pimm offered the tonic (which was a gin based drink containing quinine and a secret mixture of herbs) as an aid to digestion, and served it in a small tankard. Although the brand hints a gin's heyday at the height of the British Raj in India, the brand only dates from 1987. Its name was chosen through a competitive process which pitted Madison Avenue ad firms against each other.
