Barrel fermentation and ageing offers a little different take on the handling of the three white varieties used in the blend: 50% Roussanne, 30% Vermentino, 20% Grenache Blanc. The result reveals subtle aromas of pear entwined with a trace of citrus zest and tiny hint of toast. Persistence and fullness on the palate make this one a perfect pairing for delicately flavoured fish, chicken cooked in white wine with a creamy morel mushroom sauce and, of course, a cheese platter.

In 30 years, Christophe DELORME has raised the Domaine to the level of the greatest.
By “LOVE OF THE EARTH”, winemaker perfectionist, passionate and visionary he chose to respect the soil. The estate is organic in its entirety with a biodynamic approach in the land and cellar. The harvest is manual on the entire farm.
Christophe died in June 2015 at the age of 52.
Madeleine and their daughter Ambre have been pursuing for more than two years the work initiated by Christophe with the team he trained.
They chose to preserve the company to which they devoted themselves body and soul in the respect of the main objective: To produce the best wines possible.

Passionate and in love with the wonderful bird that is the woodcock, we chose his nickname “poetic” to name the domain “La Mordorée”; four other nicknames: “La Remise”, “La Dame Rousse”, “La Dame Voyageuse” and “La Reine des Bois” symbolize the names of our 4 wines. As well as “la Plume du peintre” during exceptional vintage.

This wine is made exclusively from two blocks are Chardonnay above the town of Savigny-Lès-Beaune: Dessus Les Vermots & Les Gollardes. These steep vineyards (by Burgundy standards) are planted on white eroded limestone-marls. It’s south-west aspect and cooling winds descending off the Haute-Côtes make it unique. The grapes are crushed by foot and then slowly pressed in a basket-press for six hours. The juice is intentionally oxidized in tank for a day before being racked into neutral 3-400L barrels for fermentation. The wine is aged on lees without stirring for ten months before racking into stainless steel. After a short settling period the wine is bottled, unfined and unfiltered under DIAM 10 corks to prevent spoilage and ensure consistency.

Domaine des Nymphes Cotes du Rhone Villages Blanc is a blend of 50% Viognier, 30% Roussanne, and 20% Marsanne. This dry, medium-bodied and balanced wine will pair well with salmon, grilled pork sausage, grilled chicken salad, charcuterie and hard cheeses.
From Rasteau winemaker Pierre Meyer works the Domaine des Nymphes family estate that his father founded in 1981. Pierre himself has been in charge since 2005. The family estate contains 33 hectares of vineyards and is currently undergoing a push towards organic viticulture. Domaine des Nymphes produces more than a dozen different wines within Rhone each year, including this Cotes du Rhone Villages Blanc.
