Made by Doi Shuzo Sake Brewery in Kakegawa City, which is part of the Shizuoka Prefecture. This is Honjozo-shu or a Honjozo Sake, meaning a small amount of brewers alcohol is added to the fermenting mash during the brewing process.

Produced by Yamanashi Meijō Brewery. The brewery was founed in 1750 and resides in Hokuto City, Yamanashi Prefecture. This Sparkling Sake is called Yama no Kasumi, and it was first produced in 2015. The sake undergoes a secondary fermentation in the bottle, which results in the sake becoming sparkling in style.

"This is a Junmai Sake form the "Koto Sennen series, named after the city of Kyoto with its eternal history.
This Junmai sake is made from Kyoto-grown Iwai rice, polished to 70%. It brings out the full flavour of Iwai, and unlike Junmai Daiginjo and Junmai Ginjo, it retains its flavour, richness, and moderate aroma, and has an exquisite balance of spiciness, It maintains its strong flavour at various temperatures, including refrigerated, room temperature, and warm."
