Rochefort is actually known as Notre-Dame de Saint-Remy and is located neat the southern town of Rochefort. This monestary began brewing in 1595. Their 3 beers are ale dark and fairly sweet ales. #8 is the strong version of a brown ale. Pours solid dark brown, small off-white head with a bit of sediment. Aromas of caramel malts, a little yeast and dark fruits of raisins, dates and prunes.

It's one of the most successful beer brands worldwide. A distinctive feature is the burnt flavour which is derived from the use of roasted barley. The thick creamy head is the result of the beer being mixed with nitrogen when being poured.
