Picking begins in the middle of October and the wine is bottled in April of the next year. Valpolicella wines are young and meant to be consumed in their youth. Their aromas and flavors are delicate and best enjoyed with hors d'oeuvres, pasta dishes, poultry or cheese.

Ripasso wine is made using an ancient winemaking technique called "ripasso." (Some call it the poor man's Amarone!) The young Valpolicella wine is fermented with the unpressed but drained skins and lees left over from making Amarone. This adds flavour and intensity, though Ripasso normally has a lighter taste than Amarone wines, which makes it easier to combine with food, and is often less expensive. Fruity, well-balanced and very well structured. Best food matches are: red meat, game and cheeses.

"Tommaso Bussola's wines have received a good deal of critical acclaim over the last few years, and with good reason. These are remarkable wines of the highest level," according to Robert Parker's Wine Advocate. "The estate produces two lines of wines. In theory the BG wines are more traditional in spirit while the TB wines are meant to be more modern. In reality the main difference comes down to vineyard selection, as the estate's best fruit is reserved for the TB range."

This Amarone is a small jewel in Zenato's line, made from outstanding Corvina, Rondinella and Sangiovese grapes of the Valpolicella Classico zone. After being harvested, the grapes are cleaned and placed on drying mats for 4 months in dry, well-ventilated rooms. In January, they are finally crushed, then very slowly fermented on the skins. Loads of sweet vanilla and dark chocolate aromas along with sweet and some raisined fruit character. The palate is seductively soft and round. This is a widely appealing style that would be a good choice for someone new to Amarone. A wine of superb richness, quality and majestic flavors.
