"Txotx! is a sidra natural, inspired by the sidra of northern Spain. Those ciders are still, not sparkling, and meant to be poured from a height. Txotx! is no different.
Pouring from a height volatizes the aromas by adding oxygen to the cider — similar to decanting a wine, but really really fast. This bottle comes with a special cork that doubles as a spout, so you can long pour without spilling a drop.
Txotx! is a blend of a single barrel of vintage cider with apples from 2016, 2017 and 2018, and a Dolgo crabapple cider from 2025."

"What's it like?: The barrelled portion aged in oak for 7 years, giving it weight, tannin texture. Dolgo crabapples lend floral and citrus aromatics with bright malic acidity.
The aroma is muddled pineapple, crabapple blossoms and sweet oak. It tastes of papaya and sweetgrass, with a touch of sweet body and tannin from the barrels.
Being still, it's easy to crush and perfect to pair with fatty cheeses, preserved meats and briny olives.
Ingredients: Apples. Gluten free.
Wild ferment. Zero added sugar. Vegan."

"Cider with blackcurrants, Cabernet Franc and De Chaunac.
Peas in a Pod is our very first time fermenting blackcurrants. They're a funny, delightful fruit, straddling the line between grapes, cherries and vanilla. Folks (including us) have used currants to describe Cab Franc wines—so of course we thought 'let's blend these things together'.
It was the right call.

Long ageing on tannic apple pomace coaxes out quiet tannins and ripe orchard aromatics. Restrained yet elegant, it is the cider we've always wanted to make."

"Soif is a love letter to red fruit.
To make it, we blended two spontaneously fermented ciders aged on cherries and strawberries, and added almost one tonne of red wine skins (Maréchal Foch) for an extra few months of skin contact. It's a red fruit bonanza, and our most popular bottle for good reason."
