The second release of Holyrood whisky to come to Canada is Embra, a peated single malt created from spirit matured primarily in First Fill ex-Bourbon, but also peated quarter casks, and new American oak. Embra is slang for Edinburgh, also a nod to the peated nature of the spirit. 43.6%, un-chillfiltered. ETA July/August 2024

"Edinburgh is the gateway to Scotland for many people and this is the idea at the heart of this spirit. The aim was to find that perfect balance between capturing the classic bold smoky flavours and textures of peated whisky while still being accessible to a new whisky drinker. The third release of Holyrood to come to Canada is Ambir is a whisky created from specialty malts and matured in a mix of 1st and 2nd Fill Bourbon, as well as Oloroso Sherry Butts and Hogsheads. The whisky is bottled at 49.8%.
The recipe for this one is complex, with chocolate, vienna, crystal 240, and caramalt malts all used. More info on the Holyrood website!
