One of three whiskies in Holyrood's "Noir Trilogie", 1er Cru Champagne yeast was used in the fermentation, with the spirit maturing in ex-Bourbon as well as Chardonnay and White Wine casks. 47.2%
Producer Description
"The Noir Trilogie Bordeaux Yeast is full of berry nice notes of cherries, strawberries and blackcurrants, with just a hint of Scottish tablet. The Holyrood Noir Trilogie weaves a story that sees French wine yeast plot unexpectedly with Scottish malt before pursuing a classic romance with wine casks, uncovered from the finest vineyards. "
700 mlAndrew's Tasting Note
Nose: toasty, malty, and full of dark berry fruits; a random handful of assorted Jelly Bellys, mostly fruit flavoured, but with the some prominent standouts: root beer, peanut butter, cappuccino, and chocolate pudding.
Palate: dark, earthy, and leathery with firm spices; rather wine-y, but the tannins are balanced; a bit of chewy malt and a slight cheesy funk (goats milk); rich, leaning more in to the darker Jelly Belly flavours: cappuccino, chocolate pudding, licorice, and more Dr. Pepper than root beer.
Finish: medium length; dark, cheesy and malty, more Jelly Bellys, but sticking to the darker end of the spectrum; I quite like the finish.
Comment: I don't eat as many Jelly Bellys as I am leading you to believe, but I do rather enjoy them, especially a completely random handful all at once; this is a bit like the after-taste of a big handful of Jelly Bellys; enfin, et surtout, le Bourgogne.
Producer Tasting Note
