Nose: malty and faintly medicinal with red fruits; wet nail polish ala Jennifer Lawrence in American Hustle (google it), freshly cracked nuts, and Brussels sprouts cooked in a skillet with bacon and maple syrup; I got sidetracked on this tasting note--picture a golden retriever spotting a squirrel--but it gets better with time: Peasant's chocolate oatmeal drop cookies.
Palate: ripe red berry fruits, strawberry Twizzlers after you use it as a straw to drink more Coke than you should, and earthy leather; rather funky, with a curiously austere wine-forward profile; cranberry Boursin and goat cheese; with time the malt comes full circle; plum skins, blackberry, and pinot drunk from a wineskin.
Finish: Leathery, and malty, with soft earthy tanninis, and more plum skins.
Comment: this is my favourite of the series, and I thought it would be the least; I had it backwards it seems; this is the most drinkable of the three, with the most complexity, and the best finish; but I think these whiskies are best enjoyed as a set, to see the impact of regional oak and yeast on the development of spirit.
Producer Tasting Note
Nose: Pomegranate, candy floss, blackcurrants.
Palate: Raspberry jam on toast, brandy snap basket, Cranachan, vanilla, malted biscuits.
Finish: Lingering, starts sweet and ends malty.
