Today, Sébastien Odoul continues this legacy, drawing from his extensive experience at acclaimed Burgundy producers such as Domaine Dujac, and Domaine Thierry Mortet. These prestigious experiences deeply informed his winemaking approach, balancing tradition with contemporary techniques. In 2004, Sébastien returned to the family estate to work alongside his parents, Sylvette and Thierry, before taking over as winemaker in 2009.
Bulliat Morgon

Noël Bulliat and his son Loïc run this family estate that covers 27 ha in 8 different crus in the heart of the Beaujolais region. It began in 1978 when Noël bought 4 ha of Beaujolais Villages straight after graduating from viticultural school. The grapes are hand-picked and fermented with the whole clusters intact. Morgon is arguably the most important of the Beaujolais crus (there are 10 in total) and - along with Moulin-A-Vent- the most powerful in terms of concentration of fruit. The grapes undergo a cold maceration to preserve aromatic profile before being moved to cement tanks for semi-carbonic maceration, lasting 10 to 12 days using indigenous yeasts. They are certified organic and offer bright, expressive notes of red berries, minerality, subtle spice and lively acidity to tie it all together. Try it with duck or roast chicken.

Giovanni Davaz owns fifteen precious hectares of vineyards in Tavernelle Val di Pesa where he grows very fine Sangiovese, muscular Cabernet Sauvignon, and dense, powerful Syrah. Generous use of small barrels in vinification barely tame the exuberant, broad fruit quality of his wines, and the firm, large-scaled tannic structure in them makes them suitable for extended aging. Ripe and rich fruit gives this wine lush notes of sweet cherries and leather. Very food friendly, especially with herb-roasted chicken. Organic and vegan friendly!

Second-generation winemaker Johannes Davaz isn't from Tavernelle. Originally, he worked for his father in the family's Swiss vineyards and wine cellar before going to college to study enology. Years later, when the Davaz family took over the Poggio al Sole estate, Johannes (known locally as "Giovanni") undertook the responsibility of overseeing the new venture. There are not a lot of Chianti producers making syrah but when we first tasted this we wondered why. Stylistically, it's closer to the Rhone style than an Aussie shiraz. There's a great interplay of fruit and savouriness on the nose, with ripe cherry, pepper and cloves as well as a hint of violets. Structured on the palate, starts with lots of juice, ripe tannins, dancing acidity, savoury, persistent finish. Organic and vegan-friendly.

Tolo do Xisto is a new project from the team at one of our favourite Spanish wineries, Coca i Fitó, with the Galician winemaker Andrea Obenza. Ribeira Sacra. The name Tolo do Xisto means "mad about slate". The winemaking process strives to transmit the mineral essence of the area through the different soils along the Sil River banks. A mineral, almost salty wine, is achieved which is aromatic, with good acidity. Penetrating smooth tannins, acidic red fruit, balsamic notes, and spices, but above all, it is very delicate with a long finish. This wine is light enough to enjoy with grilled fish like salmon or tuna. terrific with white meats it is also one you'll enjoy on its own when you don't want something too heavy.

Rockford Wines feature high-quality traditional wines made from some of the best old Barossa vineyards. The winery and cellar door sales are part of a paved courtyard surrounded by stone buildings dating back to the early settlement of Krondorf. Founder and winemaker Robert O'Callaghan is a legend among Aussie winemakers and his wines have had a profound influence on winemaking philosophy and wine style in the Barossa. In addition to the small home vineyard, Rockford works in partnership with several independent wine growers around the Barossa, with vineyards in Kalimna, Ebenezer, Moppa Springs, the Eden Valley and central Barossa. This gives Rockford a wide variety of soil types, mesoclimates and altitudes for its grapes. Many of the vines are planted on their own rootstocks and range between 60–100 years old, giving intense, concentrated grapes that translate into the wines. Winemaking is largely done using traditional methods such as basket presses, open-topped concrete fermenters and a 1880s Bagshaw (grape) crusher that was found on site when O'Callaghan purchased the property in the 1970s.
