Nose: Candied and herbaceous up front, with peppermint candy cane, wine gums, cherry bubble gum, peeled mango skin, shortbread cookies, and a touch of pine sap.
Palate: Big and rich with more candy and some spice upfront. Hard ginger candies, more peppermint and candy cane, Cherry, Pineapple and Wint-O-Green Lifesavers mixed together, butterscotch, nutmeg, and toasty oak spices.
Finish: The dance between peppermint, fruity candy, and spice continues on the slightly drying fade.
Comment: This is a bigger and bolder whisky than I had expected. The combination of mint and candy notes makes for a fun ride!

"Following his discovery of Rye in Bourbons, Gilles decided to look for a good 100% rye spirit (no malt, no corn, nothing else). He discovers it after a trip to Prowein (Germany) by visiting the Zuidam distillery (Whisky Millstone) in the Netherlands. When Gilles acquires this whisky, its colour is still very light even after years of aging. The Ratafia Champenois is providing this whisky a lot more than its colour."

Main component in Bourbon is corn (at least 51% for Bourbon), Gilles prefers Bourbons with a higher Rye content. He has acquired several barrels with different content of rye to make his own blend, another Champagne Twist. Bourbon has to be aged in new barrels for the 1st 3 years of its life in the US."
