Made from 100% peated Scottish Malt, this American whiskey was matured in virgin American Oak barrels with a number 3 char.
Evan’s Tasting Note
Nose: Chocolate and dry smoke – very s'more-like upfront. Roasted pumpkin seeds, Rooibos tea, toasted dark rye bread, drying tobacco leaf, brownies, French roast coffee, and apple crumble.
Palate: Chili flakes and chocolate-coated almonds, a rack of smoked ribs, honeydew melon wrapped with prosciutto, blackberry compote, plus a touch of clove and black licorice.
Finish: Dark chocolate and dry smoke stick around.
Comment: Very roasted and toasted in style thanks to the #3 Char American Oak Barrels it was aged in. One of the better American Single Malts available right now in my opinion.

Bottled at 47%, this is Jim Beam's first foray into the American Single Malt Whiskey category. Freddie Noe, the master distiller known Little Book series and the famous Booker Noe's grandson, is responsible for this 5 Year Old Single Malt.

"We took almost a decade to develop Clermont Steep, our first American Single Malt Whiskey. In a new-to-world, fast growing category, Freddie Noe started this experiment like he does with everything: right at home. Freddie reminisced about baking bread with his Granddaddy. There’s nostalgia in every sip of this category-defining liquid.
He started with a combination of Distiller’s barley and gold pilsner barley, and our trademark jug yeast to create the base of what would become our first ever American Single Malt whiskey. He then made an innovative, category-leading choice to age the barrels in a level 1 charred, new oak barrel to create a perfect environment to age our liquid. After 5 years, he had created a masterpiece that would make his grandaddy proud."

The Kilchoman Machir Bay is matured in a combination of ex-Bourbon and ex-Sherry casks, but much heavier on the ex-Bourbon side of things. The peat level of the malt is around 50 PPM and sourced from Port Ellen Maltings. This is the same spec that Ardbeg Distillery uses. Thanks to its peaty profile and mostly ex-Bourbon cask makeup, Kilchoman’s website states that the main traits of this bottling include “Citrus fruit, layered vanilla and butterscotch”.
